The female parent grass carp(Ctenopharyngodon idellus) (♂)×Barbel chub (Squaliobarbus curriculus)(♂) F1(crossbreedF1) as well as their parents at the same specification were used for our research.Comparative research on nutritional characteristics and texture of three kinds of fish. In additional, the expression of COL1A1 and COL1A2 genes was identified by RT-PCR. The research results are as follows: 1. Comparative research on nutritional characteristics of muscle in the three fishesThe contents of moisture, crude protein, crude fat and ash in F1 were 78.47%, 18.25%,1.99% and 1.15%, had significant difference with grass carp (P<0.05), had no significant difference with barbel chub (P>0.05).Except of crude fat,other indicators had significant difference in three fishes(P<0.05).Amino acids and fatty acids measurement results are shown:each fish contained seventeen amino acids and thirty-six fatty acids. Total amino acid (AA), essential amino acid (EAA) and delicious amino acid (DAA) contents were 156.45 mg/g,62.81 mg/g, and 61.32 mg/g, respectively; the content of AA and DAA in F1 were significantly higher than grass carp (P<0.05), but lower than barbel chub (P>0.05). The AAS and CS of lysine was highest in three kinds of fish. The content of unsaturated fatty acids (UFA) in F1 were 67.67%, lower than grass carp with signification(P>0.05),higher than barbel chub with signification (P>0.05) 2. Comparative research on muscle textureAnalysis the muscle fiber diameter and density:the muscle fiber diameter and density of crossbreedF1 compared with grass carp had not significant difference (P>0.05),had significant difference compared with barbell chub(P>0.05).Study of muscle texture of three fishes showed,the muscle tenderness,cohesiveness,springiness and chewiness in crossbreedF1 is better than grass carp with significantly (P<0.05);with barbell chub had not significant difference;the muscle adhesiveness,gumminess and resilience had not significant difference in crossbreedF1,grass carp and barbell chub (P>0.05). 3. The expression of COL1A1 and COL1A2 in muscleThe expression of COL1A1, COL1A2 genes in crossbreedF1 is higher than grass carp with significantly (P<0.05);it had not significant difference with barbell chub(P>0.05).
