In this experiment, Kiyomi was used as materials, carried out in 2012-2013 in the GuangXing and JinHua town of SheHONG, investigating the cyst membrance mastication in Kiyomi fruit, the effects of orchard habitat conditions on cyst membrance mastication occurred. Explore the relationship of water soluble pectin, hydrolysising of original pectin, total pectin, cellulose, hemicellulose and lignin content in cyst. Explore the relationship of hydrolytic enzymes (pectinmethylesterase, polygalacturonase, cellulase) activity and the cyst membrance mastication. Analysis and comparison the effects of different concentrations of calcium (calcium and boron) reagent and the prevention of Kiyomi cyst membrance mastication in the field. The results were as follows:(1) The content of WSP, CEL, HC, Lignin is the key influencing factor to the cyst membrance mastication, the low level of CEL, HC, Lignin and a high content of WSP is beneficial to form a good mastication. The key hydrolysis enzymes affecting Kiyomi cyst membrance mastication are PG and Cx from turning-color period to eatable ripe period, the higher activity, the better mastication.(2) Spraying calcium on Kiyomi foliage and fruit surface in fruit expending period improves the the cyst membrance mastication, but the effect is not significant. After calcium treatment, The content of WSP, HP, calcium in cyst membrance are increased and it promotes HC and lignin to degrade, while decreasing the degradation of CEL. At the same time, Spraying calcium can increases PG and PME activities. On the contrary, the activity of Cx is decreased. The calcium hydroxide 1.0 g/1 is the most effective one.(3) The effect of spraying calcium and boron on Kiyomi foliage and fruit surface is better than calcium treament in fruit expending period. The content of WSP in cyst membrance increases by the higher PG and PME activity. That aggravates HC and lignin degradation. The degradation of CEL is decreased, which in the activity of Cx is lower than calcium treatment. Comprehensive comparison those treatment, spraying calcium and boron has synergism effect in improving Kiyomi cyst membrance mastication. The calcium hydroxide 1.0 g/1 combined with boron 0.5 g/1 is the best.
