As the key factor of Pig Carcass Grading System in the world,the lean ratio of pork is very important for the price on quality and higher prices for better quality in pig-breeding market.Although China has the largest pork production,the average lean ratio in China is far lower than that in Europe and the United States and other developed countries.The main reason is that the Pig Carcass Grading System of China started very late,which caused that the farmers had no useful indicators to improve the lean ratio of pork.Therefore developing an accurate,high efficiency,low cost lean ratio measurement of pork is extremely meaningful.This article design a method for measuring the lean ratio of pork based on NIRS(Near Infrared Reflectance Spectroscopy)and FOS(Fiber Optic Sensor)technology.This method used the different absorbability of fat and lean meat for near-infrared light to judge whether the meat is fat or lean one.A double optical system,in which the fiber detector was lead into a probe which can be stabbed into the pork carcass,was designed to obtain the inside near-infrared light reflectance of pork carcass to acquire the lean ratio of stabbed part.A signal processing circuit based on LIA(Lock in amplify)was developed to collect the very weak light signal buried by noise,and STM32 Microprocessor was used to collect the light signals and the corresponding position of the probe inside the pork carcass and sent the data to computer by Serial port Communication.Using WPF technology developed a software to represent the real-time measuring procedure and calculate the fat and lean part length through the data collected.An experiment platform was designed to simulate the procedure that the fiber sensor moves inside the pork carcass by using screw,encoder and other things.And the lean percentage of the tested part was obtained,which proved the system to be practical.An improved plan was proposed according to the result,establishing the foundation for the next study.
