This topic analysised the research object of main cultivated varieties of province pumpkin seed export base in heilongjiang such as sweet LiWang,sweet chestnut 23,Mr.Biggs red chestnut,honey no.1.First of all,the export of pumpkin seed nutrient composition are analyzed,then the morphological index and sensory test indicators,pesticide residue and heavy metal pollution has carried out various quality inspection research,in order to provide theoretical basis for the quality safety and quality breeding,to enrich the content of food composition database and the research development of pumpkin seeds series products of a certain scientific basis.Export pumpkin seed nutrition research used different methods on the basis of content determination and analysis of cellulose,protein,fat,starch and polysaccharide.then,using high performance liquid chromatography and gas chromatography,respectively on main efficacy material glycoprotein in pumpkin seeds and pumpkin seed oil fatty acid content determination and analysis of different varieties were with ion emission spectrometry pumpkin seeds of 10 kinds of mineral elements content;Export pumpkin seed quality test the first is its length,width,thickness,kernels and kernel shape index were determined,the second for the pumpkin seeds of the export of sensory evaluation,and the gas-mass spectrometry and atomic absorption spectrometry ia pumpkin seeds on exports of 12 kinds of pesticide residues and 6 kinds of heavy metal content were determined and analyzed.The results show that:1.By determining the content of pumpkin seed nutritional components and mineral elements,the different analysis shows that different varieties of pumpkin seeds were highly significant differences in the indexes.There is a close relationship between the nutritional components and mineral content and variety and origin.The content of crude fiber was the highest Xiang Li 23;the content of polysaccharide and crude protein had the highest sweet Liwang;crude fat and starch content had the highest Abis Hongli.Different varieties of pumpkin seeds in K,Mg,Ca,Fe,Mn,Cu,Al,Na significant difference,which show that pumpkin seeds are high in potassium and low sodium plant.HPLC Results showed that the sweet Liwang protein content of up to 583.68 mg/g method for determination of protein content in pumpkin seed extract;Gas chromatography results showed that unsaturated fatty acids content of four pumpkin seeds has significant cifference.the highest of linoleic acid and linolenic acid content is just the Abis Hongli.the highest of oleic acid content is sweet Liwang.2.The results of morphological indicators showed that there were significant differences in seed length,width,thickness,1000 grain weight and seed kernel.Abis Hongli is better than other varieties of seed morphology;the pumpkin sensory test showed that Abis Hongli has significant advantages from both the purity,impurities and imperfect grains;pesticide residues results shows that 12 kinds of pesticide in different samples did not exceed the national food safety standards;the heavy metal content test showed that different pumpkin seeds of Cd,Cu,Pb,Cr,As and Hg did not exceed the national food safety standards limit.
