The conventional detection methods of protein,fat,dietary fiber,moisture and ash in infant nutrition rice flour are relatively mature and high accuracy,but tedious pretreatment steps,used of a large number of chemical reagents,high cost,long testing time,destroyed samples.What’s more,the conventional detection methods need to use special instruments and equipment,which reduce testing,production and scientific research efficiency.Compared with traditional detection technology,near-infrared(NIR)spectroscopy technology is efficient,fast,without pretreatment,no chemical reagents,low cost,non-destructive and green environmental protection.Moreover,we can get multiple target parameters at the same time by near infrared spectrum analysis technique.In this study,the near-infrared spectroscopy technology is combined with chemometrics method and used for quantitative analysis of protein,fat,dietary fiber,moisture and ash in infant nutrition rice flour.Several essential issues on near-infrared spectroscopy technology in building the NIR forecast model are investigated in terms of collection and preparation of samples,selection of test parameters,acquisition of spectrum,data processing and modeling.Finally,the established model is validated.The main contents and conclusions are as follows:1.In this study,160 batches are extracting from the collection of infant nutrition rice flour samples which were carried out quality supervision sampling from 2015 to 2016 by the food and drug administration in Jiangxi province,including Heinz,Meiyi,Ashley,Beingmate,Mlove,Anpei,etc.The conventional detection methods are used to detect the protein,fat,dietary fiber,moisture and ash in infant nutrition rice flour,respectively.The results are used as the base of the calibration of near-infrared spectrum quantitative analysis model.2.In this study,the content of protein,fat,dietary fiber,moisture and ash in 160 samples are tested by near-infrared spectroscopy technology.The quantitative analysis models of these five indicators show that the real measured values and the model predicted values of both calibration set and validation set have the correlation coefficient above 0.90,which exhibits a good linear correlation.Standard deviation is relatively close,which shows a very good stability.Relative percent deviation(RPD)is greater than 3,which indicates a very high accuracy.All the results show that the established near-infrared spectrum quantitative analysis model can accurately measure the content of protein,fat,dietary fiber,moisture and ash in infant nutrition rice flour.3.Finally,the established near-infrared spectrum quantitative analysis model is validated by the external validation.50 samples which do not participate in building the model are predicted by established near-infrared analysis model.By compared,the prediction results and the results by classic methods are taken the t test.The t value of protein,dietary fiber,fat,moisture and ash is-1.56,1.43,1.15,-1.03 and 0.98,respectively.All of them are less than the critical value of t(0.05,50)= 0.05.There is no significant difference between two kinds of method.4.In this paper,the application of the near-infrared spectroscopy technology in the detection of protein,fat,dietary fiber,moisture and ash content in infant rice flour was studied.It provides feasibility basis for the nondestructive examination and identification of the infant nutrition rice flour quality detection.Moreover,it laid a solid foundation for the further investigation and application of the near-infrared analysis of food and drug.
