The Auricularia auricula polysaccharide shows some functionalities,and it can lower cholesterol,reduce blood fat and blood glucose,and has the functions of anti-oxidation and anti-radiation.Most of the existing products just has a single function of anti-radiation or anti-fatigue,but the product with both of these functions or more is lacking.The food,manufactured from black fungus in combination with functional factors,is rare at home and abroad.It is of realistic significance to further study functional foods of black fungus,produce the food with both functions of space radiation resistance and fatigue resistance from the Auricularia auricular combined with some mild functional factors,and study its formula and technology to obtain the multifunctional food.In this study,the main raw material was the Auricularia auricular,added into the energy factor(with pine nuts)and some functional factors(the powder extract of acanthopanax senticosus and panax quinquefolius).By response surface method,the formula(10 pieces/pack)was obtained,pine nut powder 14.44%,ciwujia extract powder of panax quinquefolium 2.17%,milk powder 14.15%,lactose 15.38%,sugar15.38% and starch slurry 31.26%.Through the investigation of the preparation,the optimized preparation condition was 16 mesh granulation size,3%~9%grain moisture,and 15~25 KNtablet hardness force.The animal tests showed that the energy bar had the effect of the radiation resistance and the fatigue resistance on mice.In the swimming test for mice,the force exhausted time,the muscle and the liver glycogens were investigated.After the swimming,the muscle and the liver glycogens of mice in any dosage of energy bar were obviously higher than these in the blank group,which indicated energy bar could improve the contents of the muscle and the liver glycogens of mice after movement and could speed up their recovery and increased the fatigue resistance.In the test of 60 Co radiation,it was shown that the energy bar could effectively increase the survival rate of mice and improve their index of immune organs,the thymus and the spleen,after they were radiated.According to the analysis of SOD activity in the serum of mice,radiation was able to significantly decrease the activity of SOD in mice plasma compared with the blank group,and energy bar group could obviously improve the activity of SOD compared with the model group.The swallowing test of the macrophages of the radiated mice after fed with the energy bar,the results showed that the carbon clearance index K values were obviously increased compared three groups of energy bar dosages with the model group,and the distinction among three groups was not obvious,and all three groups of different dosage of energy bar make their immune ability recover.In the experiment groups of the mediate and high dosages,the carbon clearance index K values were higher than that in the blank group of the normal level.These results indicated the energy bar could stimulate the macrophages,such as the immune cell,to enhance their swallowing ability,accelerate the removal of the carbon grain,and could get the immune ability of mice recover after they were radiated.And through the examination of the sample,the standard of the quality,which could be applied afterward,were concluded.The items included microbiological and acid value,peroxide value,water content,disintegration,friability.
