Brown rice is highly nutritious,but it is inclined to be affected by lipase,insect pests and mold,which would lead to the decrease of the quality during the storage.The existing preservation methods either have organic reagent residue,limited energy utilization,or need expensive instruments,which are not suitable for efficient preservation.Meanwhile,brown rice is hard to eat with tightly wrapped dietary fiber(DF).Catalytic Infrared Radiation(CIR)has the advantages of fast sterilization and enzyme inactivation.The screw extrusion technology are easy to operate and can improve edible quality.Therefore,we focus on these two techniques about brown rice preservation and utilization.We studied the effects of brown rice with CIR technology firstly,and then researched the effects of CIR pretreatment on the stability of brown rice,the high DF brown rice product with twin-scew extrusion technology were investigated finally.The details are as follows:1.The effects of radiation on the quality of brown rice were studied by CIR.Results revealed that at the infrared processing condition of time=6 min,distance=35 cm,and initial water contents=14.50%,the residual lipase activity was 67.79%,the germination rate of 15.00%,the total amount of the residual mold was 3.90%,and the moisture content of 12.05%.After CIR treatment,the free fatty acid content of brown rice did not change significantly.The system and structure of the inner endosperm cell of rice were damaged,which resulted in the decrease of head rice percentage and germination rate.Meanwhile,tempering could significantly improve the rate of head rice.2.According to the air conditioning technology,CIR had the similar preservation effects in delaying the formation of free fatty acids and preventing insect breeding.In 150 days of storage,the two samples were free of Sitophilus Oryzae,free fatty acid contents were 54.18,and 55.30 mg KOH/100 g respectively for the two samples.On the inhibition of fungi,CIR was superior to air conditioning technology,at 150 days,the total number of fungi was 20 and 6460 cfu/g for CIR and air conditioning technology respectively.3.Brown rice content of Pueraria was 10%.The optimal conditions of the extrusion were moisture content 14.13%,extrusion temperature 130? and screw speed 350 r/min from the single factor test.Under these conditions,the property of product was 103.56% gelatinization,387.00% water absorb index,23.78% water solubility index,and 7.09% moisture content,while dietary fiber increased to 2.22%,including 0.34% sonlble dietary fiber,1.88% insoluble dietary fiber.
