Lycium barbarum powder is one of the most popular products in the market.It has a high nutritional value,and its quality directly determines the degree of consumer acceptance.However,due to the influence of weather and other factors in the process of processing,packaging,storage,transportation and sales of Lycium barbarum powder,it is easy to produce the phenomenon of moisture absorption and agglomeration,which seriously affects the quality of Lycium barbarum powder.To solve this problem,this paper uses three kinds of dried Lycium barbarum powder as ·raw material,study on the moisture absorption and moisture migration of Lycium barbarum powder,the changes of active components and chroma before and after moisture absorption were measured,and study on anti caking experiment of Lycium barbarum powder,concluded as following:(1)The experimental results show that the three factors of particle size,ambient humidity and temperature have significant effect on the moisture absorption of Lycium barbarum powder(p<0.05).Tbe contents of polysaccharide and carotenoid were decreased after moisture absorption,but the content of flavonoids increased after moisture absorption.After the absorption of Lycium barbarum powder color becomes dark,red degree reducing,color partial yellow,the difference of color is manifested as vacuum freeze drying>hot-air drying>dried.The causes of these results may be related to temperature,water activity,light and other factors.(2)The single factor experiment found that the smaller particle size,high temperature and humidity make it easier to absorb moisture;The moisture content of Lycium barbarum powder increased with the increase of water activity value under three kinds of drying methods,when the water activity is greater than 0.5,the moisture content of the same water activity was dried>hot-air drying>vacuum freeze drying.Low field NMR studies drawn relative content and migration during the moisture absorption process of different treatments Lycium barbarum powder three states of water,among them,the immobile water is the largest,and the free water content is the least.(3)The effects of the amount of desiccant,the amount of anti-caking agent and the time of moisture absorption on the caking degree were investigated.To optimize the optimal conditions for anti-caking effect of Lycium barbarum powder by response surface analysis software is:the amount of desiccant 0.06%,the amount of anti-caking agent1.00%,the moisture absorption time is 12d,in this condition the caking degree was 48.73%;Through the Design-Expert8.0.6 software to multiple regression fitting of test,the factors that influence the degree of caking in turn is the Amount of anti caking agent>moisture absorption time>the amount of desiccant.Under the optimum anti caking condition optimized by response surface,The effect of different packaging materials on the caking degree of Lycium barbarum powder was Aluminum foil composite film packaging(Aluminum foil/PE)>Kraft paper packaging(Kraft paper/PE)>Polyethylene transparent plastic packaging(PE).
