Application Of The Self-assembled Films Containing Flambeed Gum And Chitosan In Hurood Packaging

Inner Mongolia is rich in dairy products.However,milk bean curd is difficult to preserve,with the phenomenon of moldy,fat deposition,short shelf life.In order to extend the shelf life of milk curd.The subjects chose anionic polysaccharide flaxseed glue and cationic polysaccharide polysaccharide as the main material of self-assembly.Use the phosphate buffer to adjust the surface charge of the milk bean curd.One way is to adjust the surface of dried milk cake into electronegativity(with buffer solution to adjust pH = 7).Another is to adjust its suiface into electricity positive(witlh buffer solution to adjust pH = 3).Both methods set 0,5,5.5,10,0.5 double layer.Research the influence of microorganism and the physical and chemical indicators of dried milk cake with different treatments and layers of the self-assembled film.The research content and results are as follows:1.The microscopic results show that:With the increase of the number of coating layer upon layer,the surface of porous structure slowly disappear.Dried milk cake Hurood surface gradually covered by layers of self-assembled film.When assembled into 10 double,hurood surface is completely covered.The original rough surface has been gradually even and smooth.Proved that the flaxseed gum and chitosan self-assembled membrane assembly to the hurood surface very well.The SEM results also verify that the self-assembly film is successfully assembled to the surface of the milk tofu,and the thickness of the self-assembly film is 5 to 6um according to the scale.2.The results of microbiological measurements show that the above index increased with the increase of the number of self-assembly layer.The outermost layer of chitosan is obviously better than the effect of flaxseed in bacteriostatic effect.When hurood surface is electrically positive for The total number of colonies,Escherichia coli and Staphylococcus aureus,the optimal antibacterial effect with the condition of pH=3 and 10 layers.Fungal yeast in electronegativity bacteriostatic effect is best with condition of pH=7 and 10.5 layers.Compared with the blank group extended the four days and prove its bacteriostatic effect is outstanding.3.The results of the physical and chemical indexes(PH,color difference,hardness,chewiness,sensory evaluation,free amino acid,fat deposition)show that Different electrical and same layer for the physical and chemical indicators have no obvious difference.But the same electrical and different layers have significant different.Compared with the blank group,significant difference was found in the indicators.Proved that self-assembled film can keep a good quality for hurood.
