In recent years,the development of the beer industry in China showed a dowmward trend.On the contrary,the production and sales of the domestic craft beer is growing rapidly.The craft beer industry in foreign country started earlier,there are advanced automation equipment and technology to support the development of craft brewing enterprises.The craft brewing manufacturing in our country is in its infancy,nowadys there are many promblems in our craft breweries such as a low degree of automation equipment and a locked control system.In ordor to accelerate the development process of domestic craft beer industry,based on the beer production process and its automation requirements,a distributed control system(DCS)scheme for a small brewery workshop was proposed.The main work of this thesis is as follows:(1)A distributed control system is designed specifically for the small breweries based on the analysis of the existing beer production process and control system.In this system,The Siemens S7-300 is used as the core controller to assign the I/O points of the objects,complete the selection of the Hardware and design the software program for the craft beer production process.(2)Aiming at the nonlinear and delay in the gelatinization reaction,a fuzzy+PID temperature controller is designed in the PLC to control the gelatinization process.The mathematical model of the temperature in gelatinization and fermentation are established,and then completed The simulation operation of variable temperature control process by the Simulink functiong on the platform of the Matlab.(3)The Variable data in beer production control system has a promblem of multi-sources and heterogeneous,which may cause difficulties in the equipment update and date management of the beer manufacturers.In view of this problem,a communication network scheme of Profibus+OPC is designed on the platform of Simatic Manager and WinCC configuration software,tointegrate and manage the variable data in this control system.(4)In the management,the beer saccharification process monitoring screen and the data connection was configured by WinCC OPC client.In ordor to strengthen the safety of the control system so that managers can quickly troubleshoot the cause of the production failures,a fault alarm in WinCC software is configured.With WinCC platform,the variable data archiving and report printing functions are also implemented.(5)At the same time,programs and algorithms in the production process are verified by simulation.In the communication network between the host computer and the lower computer,the monitor screen for the variable data and the fault alarm were also tested and simulated in the DCS.The results show that: the distributed control system runs smoothly,the precision of the control algorithm is improved and the overshoot is reduced.in the process of craft beer,the openness of control system can be improved and it has a certain reference value to enhance the level of automation in China’s craft beer brewing.
