Recently, with the increasing consciousness of the risk that excess intake of fat and calories, people have developed the markets about fat substitutes which can reduce calories.Structured lipids contains the unique features of components in fatty acids, such as melting characteristics, digestion, absorption and metabolism, which have enhanced their nutritional value and practical in food and healing properties.In this paper, we have studied on the method of enzymatic synthesis, using rice bran wax as substrate. First, fatty acids and fatty alcohols in rice bran wax have been analyzed by GC and GC-MS. The results showed that the length of carbon chain of fatty alcohols in RBW is from C22-C38, the major fatty alcohols are C26( 17.2%), C28( 15.95%), C30( 12.5%)and C24( 13.1%),and even carbon numbers in fatty alcohols is account for 79%. C22 and C24 fatty acids in RBW are the major saturated fatty acids , the content is up to 70%, meanwhile there are unsaturated fatty acids which are oleinic acid. This experiment has used RBW and glycerol as the material, interestrified with the Novozyme 435 as catalyzing enzyme. The new structured lipids are purified by column chromatography separation, and we've also made a qualitative and quantitative analysis by thin layer chromatography (TLC).Components of the fatty acids in structured lipids have been analyzed by GC-MS.SLs-TAG mainly contains C16, C18,C22 and C24, the content is 24.54%,22.84%,21.5%,20.43%, respectively. The content of the length of carbon numbers which more than 20 accounts for more than a half in SLs-TAG. There are unsaturated fatty acids in SLs-TAG,too. Comparing with the triglyceride in animal fat, the same fatty acids both in SLs-TAG and animal fat, which in SLs-TAG has a lower content, what's more, SLs-TAG has more carbon chain which has a length of C20, and much longer than animal fat. The low-calorie structured triglyceride oxidation stability is better than animal triglyceride at 180 ? for a long time. peroxide value, carbonyl value and the acid value are lower than animal triglyceride. The melting point range is 30 ?-73.9 ? of SLs-TAG, and it also contains six components mainly.
