Study On The Regeneration Of TBHQ By Tea Polyphenols And Its Pilot Application

In order to prolong the shelf life of products of vitamin A capsules in an enterprise,the oil soluble synthetic antioxidant in the capsule content and water soluble natural antioxidant in the soft capsule were studied in this paper based on the regeneration effects of antioxidants.Aiming at prolonging the shelf life of objective capsule by adding natural antioxidant tea polyphenols in soft capsule without increasing the dosage of synthetic antioxidants tert-butylhydroquinone(TBHQ)in the capsule content.First of all,the regeneration ability of tea polyphenols on natural and synthetic antioxidants was investigated.And the changes of the antioxidant ability before and after regeneration was analysed by DPPH free radical scavenging method.In order to evaluate the regeneration effect,a new concept of regeneration efficiency was established on the basis of the value of antioxidant ability.And a specially designed separable system was set to study the regeneration reaction,one is the regeneration of solid antioxidant-licorice,ginger and oats contain non water soluble dietary fiber of natural antioxidants-by the dissolution of tea polyphenols;another one was the regeneration of TBHQ in solution by solid-stated tea polyphenols-tea powder,the inclusion complexes of tea polyphenols and β-cyclodextrin,the combination of tea polyphenols and polydextrose,and gelatin membrane added with tea polyphenols.The results showed that the regeneration efficiency of dissolved natural antioxidant of tea polyphenols on licorice,ginger and oats were up 0.85,1.63 and 1.98 respectively,and the regeneration efficiency of four kinds of solid-stated tea polyphenols on TBHQ were 0.69,0.78,0.86 and 0.51 respectively.It incidated that tea polyphenols in two system showed better regeneration ability.Then,in order to verify the regeneration effect of tea polyphenols on TBHQ in the unseparated system,the electron spin resonance spectroscopy(ESR)analysis was applied to track changes of radicals in the system.It was found that the decline percentage of oxidation rate of oil was 87.6% when the two kinds of antioxidants existed at the same time,which was greater than the theoretically plus value 62.94%.And the initial oxidation rate of oil when two kinds of antioxidants existed at the same time was 0.03163(the coefficient of oxidation kinetics equation),which was consistent with the oxidation rate of oil added TBHQ only(0.03284),but different greatly with the oxidation rate of oil added tea polyphenols only(0.08026).Thus,the synergistic effect of tea polyphenols and TBHQ exist when used together,and the synergistic effect was from the regeneration of TBHQ by tea polyphenols.Finally,taking vitamin A soft capsule as the applying object of the regeneration effect of tea polyphenols on TBHQ,the first pilot production of peanut oil soft capsule was produced by adding TBHQ to peanut oil,tea polyphenol to capsule shell.The peroxide value was taken as the oxidation index of peanut oil during the accelerated storage test.It was found that the peroxide values of the oil added TBHQ in the capsule were significantly different between the capsule shell with or without tea polyphenols at 37 degrees and 55 degrees(P < 0.05),indicating the oxidation of oil can effectively reduce with tea polyphenols added in capsule shell.And the shelf life prediction model-Arrhenius equation-of vitamin A soft capsules was lnK=8.8975-4177/T,the theoretical shelf-life calculated was 428 days,which can extend the shelf life to 113.2% when compared to the control.Therefore,in this paper,the tea polyphenol regeneration TBHQ system was constructed by adding tea polyphenols in the soft capsule shell,and it was successfully applied to vitamin A soft capsule,which provided a strong support for the extension of the shelf life of the product.
