High quality rice Yongyou 15 in North Fujian have been planted a lot in several years.To study the effects of different storage factors,it had guiding significance for the storage of local institutions and individuals.This paper studied that the changes of Yongyou 15 storage qualities,processing qualities,edible qualities,microstructure and volatile matter under the different temperature,water content,storage methods during270 days.Its aim was to apply the best way to storage Yongyou 15 for North Fujian by the theory premise.The results were as follows:1.The effect degree of the storage index to storage qualities: storage time> the storage temperature> moisture>storage methods.Nitrogen storage had no significant effect on storage qualities and processing qualities.The longer storage time and the higer temperature can lead to the lower storage and processing indexes.The higher water content make the storage and processing index better.It can choose the 13.8%moisture of Yongyou 15 to store the grain depots,which could ensure the high quality and delay the processing qualities decreased.2.The effect degree of the storage index to the texture of rice and pasting properties of rice flour: storage time> moisture> the storage temperature>storage methods.Nitrogen storage and temperature had no significant effect on texture and pasting properties.The longer storage time and the higer temperature could lead to the lower texture and pasting properties.The higher moisture can make the texture better and pasting properties poor.3.The storage time is longer,the microstructure is visible in the granule bound starch is loose;the high water content combination,shows good quality;storage temperature on starch grains with degree of effect,in order to ensure the quality,should choose low temperature and quasi low temperature storage.4.β-sheet and random coil of the protein secondary structure have moderate negative correlation,and the correlation coefficient is-0.561,β-turn with the α-helix is moderate negative correlation,and the correlation coefficient is-0.528,β-turn andrandom coil appear in low negative correlation,and the correlation coefficient is-0.274.Show to α-helix fall in β-sheet and β-turn,the rise of the random coil.5.The olefins,alcohols,aldehydes material were increased in the extension of storage time.The content of ketones and esters is almost unchanged,but alkane and acids declined.the higher water content is better than others,14.5% > 13.8% > 13.1%.Storage 180 d is the peak value of the content of a lot of flavor substances,as the continued effect of variation of storage,the storage of 180 d cycle optimal can be set to Yongyou 15 aroma is the longest storage period. |
