Restaurant is an important part of people's daily life,the food safety in restaurant is the food production and processing links "from farmland to the table" the last hurdle.Once the problem is gone,it will directly endanger the lives and health of consumers.There are many factors that affect the safety of food in restaurant,chemical factors,physical factors,biological factors and other factors.Listeria monocytogenes is one of the biological factors that have a wide range of growth temperature,a strong resistance to heat and cold.It can be widespread in the food processing environment,the mortality rate of up to 20 to 70%,by WHO called one of the four major foodborne pathogens.In recent years,many researchers have studied the contamination of Listeria monocytogenes in food,but there are few reports about the Listeria monocytogenes pollution in restaurants.This topic is based on this purpose,randomly selected Harbin peripheral restaurants to collect the environment and food samples in the kitchens,for Listeria monocytogenes detection,serological classification and PFGE classification.In this experiment,the total detection rate of Listeria monocytogenes in the kitchen was 15.3%,the detection rate of environmental samples was 12.2%,and the detection rate of food samples was 8.3%.The serotypes of 1/2a,1/2b,1/2c,3b and 4b were detected in the serotypes.The detection rate of 1/2a serotype was the highest and distributed widely.The 4b strain that has a higher pathogenicity also be found.Increase the above detection of several serotypes of monitoring efforts,focusing on high virulence 4b strains of pollution.The strains were divided into 10 PFGE types,the homology was 49.8%?100%.The homology of the strains from different samples were 100%,which indicated that there were possible cross-contamination in the food process.The results showed that there were no significant correlation between the strains,and the PFGE types of the same source were different.The differences indicate that the pollution was from different clones strains.The pollution of Listeria monocytogenes may be from a variety of aspects.According to the above results,from the environment,equipment,personnel,cleaning aspects of the restaurant,suggest a method of controlling Listeria monocytogenes in kitchen of restaurant.After three months of implementation of the method of controlling Listeria monocytogenes in kitchen of restaurant,the detection rates of each monitoring point were significantly reduced.The control methods of Listeria monocytogenes in the kitchen of the restaurant can effectively control the pollution of Listeria monocytogenes and ensure the safety of consumers.
