Listeria monocytogenes(L.monocytogenes)is an important food-borne pathogenic microorganism,It is ubiquitous in the environment,and can pollute the vast majority of food,such as meat,eggs,poultry,seafood,dairy products,vegetables.That can cause L.monocytogenes is a pathogen of zoonosis,which contaminates ready-to-eat foods,such as cheese,cooked chicken meat,processed Turkey meat,frozen smoked fish,without the acidification of the pig tongue aspic and so on.L.monocytogenes can still grow in the 4 ? environment,so it is one of the main pathogenic bacteria in frozen food threatens human health.Tea tree oil(TTO)belongs to the white laminated shrub tree species.Tea tree oil has a broad activities,such as antifungal,antibacterial,antiviral,antitumor and anti-inflammatory.Compared with chemical synthetic preservatives,tea tree oil that is as a potential natural food antimicrobial preservatives,is pure natural and low poison,and complys with "green life,energy conservation and environmental protection" of social development direction.It has been reported tea tree oil was applied to food antiseptic preservation areas in the domestic.Try it as a new kind of anticorrosive antistaling agent for banana and strawberry preservation.Tea tree oil is already approved as a food flavors by the United States,but its antibacterial mechanism has not yet been reported.In this paper,we used the western blot?RT-PCR?ELISA technologies to inspect that the inhibition of tea tree oil to L.monocytogenes and the activation he inhibition of tea tree oil to L.monocytogenes for NLRP3 inflammatory corpuscle(NLRP3,Caspase 1 and ASC)in vivo and in vitro.Structure of the experiment indicates that tea tree oil has good inhibition to L.monocytogenes,and the minimum bacteriostatic concentration(MIC)is 1-2 mg/ml;gradient concentration of tea tree oil can inhibit virulence protein gene transcription and expression of protein of L.monocytogenes;tea tree oil can also suppress protein expression of the inflammatory cells induced by L.monocytogenes.The vivo experimental results show that tea tree oil can reduce the number of L.monocytogenes in mice and the expression of inflammatory body protein in the organization.The objective of the study of tea tree oil resisting to L.monocytogenes provides the theory basis for the development and application of food additives,As well as provides new ideas for other food preservatives antibacterial mechanism research.
