The effects of cold plasma on the sterilization of squid filament and the effect of different packaging(aluminum plastic packaging,vacuum packaging,modified atmosphere packaging)on plasma sterilization were studied.The effects of plasma on the quality of squid were studied.The sensory quality of squid,Total radio basic nitrogen(TVB-N),thiobarbituric acid(TBA),peroxide value,acid value and fatty acid,and the changes of water,was measured before and after cold plasma treatment.Using Arrhenius to establish a squid silk shelf period model.The results are as follows:1.The voltage intensity of cryogenic plasma has a great effect on the killing microbes in squid filaments.Under the same conditions,in the range of 40-60 kV,the greater the voltage intensity,the better the sterilization effect.The sterilization time of the cold plasma has a great effect on the killing effect of the microorganisms contained in the squid filaments.Under the same conditions,in the range of 10-90 s,the longer the treatment time,the better the killing effect of the microorganisms.From the perspective of enterprise processing,to save energy and ensure the purpose of sterilization for the purpose,the best condition is under 60 kV 60 s treatment,so that bacteria and fungi could down to 0.01×103cfu/g below at the same time.2.The plasma sterilization of the squid filament wrapped through the aluminum-plastic package has no obvious bactericidal effect,which may be related to the packaging material so that the plasma can not penetrate.The low temperature plasma has obvious bactericidal effect on the sonic silk of the modified atmosphere,which is an efficient sterilization method,and the 75%CO2+25%N2 atmosphere packaging can effectively maintain the quality of instant squid silk.3.The sensory quality and nutritional quality of the squid filament did not change significantly after plasma treatment,but the pH value,TVB-N value,POV and acid value of the squid were increasing with the storage time,but the rate of rise was significantly lower than the control group.Its water content,protein content decreased,but the rate of decline was significantly lower than the control group.TBA is relatively stable,the overallshowed a slight upward trend,the two groups no significant difference.Squid silk contains a large amount of unsaturated fatty acids,and after plasma treatment,the fatty acid species did not change,and the content decreased by only 2.54%.4.The sensory scores of squid were decreased with the increase of storage time at different temperatures,and the rate of sensory score decreased with the increase of storage temperature.During the storage period,the peroxide value,TVB-N and colony total value of squid were increasing with the prolongation of time,and the temperature determined the rate of change.Through the study of squid silk shelf life prediction model available 30?storage conditions squid silk shelf life of 90 days,35? storage conditions squid silk shelf life of 59 days,40? storage conditions squid silk shelf period Life of 40 days,45?storage conditions squid silk shelf life of 29 days.
