The 3D printing is one of the signs of the digital production in the background of new industry revolution.It has a profound impact on the way of production.Due to the advantages of free design,efficient production,strong artistic sense,personalized customization,etc.,the 3D food printing technology has become a new type of 3D printing technology.At present,the relevant research institutions based on the injection pump extrusion method have developed a variety of 3D food printer and achieved some results,but how to improve and develop the new extrusion method is still a difficult problem.This paper focuses on the above issues,the main work includes:(1)By comparing and analyzing the types,differences,advantages and disadvantages of single screw and double screw,propose a new type of 3D food printing technology with symmetric meshing double screw extrusion(2)Develop a new type of 3D food extrusion nozzle based on the exotic and economic ingredients of Guangxi(cassava flour and corn flour).The nozzle design contains the scheme of double screw motor driven by double stepping motor,the scheme of synchronous belt drive,the scheme of symmetric double screw.(3)Based on ABAQUS finite element analysis software,analyze the stress and velocity of the flow field in some extrusion flow channels,provides the basis for the design of the nozzle extrusion mechanism.(4)Setting up and testing the 3D print experiment platform.First,research the food related properties,and then design the experimental program.Through the improvement of control procedures and adjusting the printing results,finally,get the reasonable print parameters and analyze the running results of the nozzle extrusion mechanism.The research results show that a new type of 3D food printing technology with symmetric meshing double screw extrusion can be successfully used to the printing of cassava flour and corn flour mixture,which has the advantages of continuous printing,large extrusion volume,small size,stable operation,printing two kinds of ingredients simultaneously,etc.
