Effects Of Combination Use Of Methionine And Inorganic Sulfur On Grain Glutenin Accumulation And Processing Quality In Wheat

The yield and quality of wheat are dependant on cultivar,environment and management.Fertilization is one of the most important management measures.Winter wheat cultivar Yangmai 16?medium gluten?was selected to study the effect of methionine and inorganic sulphur fertilizer on glutenin and processing quality,and the effect of sulphur amino acid spraying on glutenin and processing quality,to clarify the effect of sulphur containing amino acid on wheat quality,providing a theoretical basis and reference for rational fertilization.The main results are as follows:1.Effects of combined use of methionine and inorganic sulphur fertilizer on grain glutenin accumulation and grain quality in wheat Application of sulphur fertilizer could increase protein content and its component in different degree.S₆₀,Met₆₀ and Met₆₀?T?could significantly increase the GMP content.S₆₀?T?could significantly increase the GMP volume mean diameter,sulphur fertilizer accelerate GMP number mean diameter(except S₆₀),and the effect of topdressing is slightly better than that treatment of the base.Sulphur fertilizers have no significantly influence on GMP surface mean diameter.Individual glutenin subunits performed best with the treatment of Met₆₀?T?,with S₆₀?T?followed.Sulphur fertilizer has no significantly influence on sulphydryl groups and disulphide bonds,and comparing to topdressing fertilizer,base treatment accelerate the form of disulphide bonds.Sulphur fertilizer significantly increase the wet gluten content?except Met15S45?,dry gluten content?except Met15S45?Met30S30?and SDS sedimentation value(except S₆₀),increase dough absorption,degree of softening,but significantly decrease stability time and farinograph quality number.Met30S30 significantly increase development time.Base fertilizer and topdressing S₆₀?T?could improve yield significantly,but application of Met₆₀?T?causes yield decreased significantly.Considering the effects on yield and protein quality,S₆₀?T?is the most suitable treatment.2.Effect of foliar sulphur containing amnio acid on on grain glutenin accumulation and grain quality in wheatThere is a general increase in foliar application on grain weight and grain number per spike.Ser/Met/Cys+Urea treatments and Ureal treatment could significantly increase the wheat grain protein content of Yangmai 16.Ser+Urea and Met+Urea treatment raised GMP content.For GMP particle size distribution,?NH₄?₂SO₄? treatment is the best for Yangmai16.Expect?NH₄?₂SO₄?,Cys and Ureal treatment,other treatments increased Yangmail6 subunits content in different degree,Ser in the best one.Spraying application have no significant effect on sulphydryl and disulfide bond in flour.Spraying application could increase the content of wet and dry gluten in Yangmai 16,but there is no significant effect on gluten index.Cys and Ureall treatments significantly decreased SDS sedimentation value.Considering all parameters,Ser+Urea are the best treatment in this study.
