Red radish pigment is a kind of recently-developed natural red pigment which take geranium as the main ingredient, it is a kind of coloring agent for food. However, the application of red radish pigment is limited because the obvious radish peculiar smell generate by sulforaphen exists in red radish pigment.Liquid-liquid extraction separation is widely used now because of its high efficiency, good selectivity, mild condition, simple operation, low cost, and the continuous process.Carbon atoms of isothiocyanate groups in sulforaphen show positive electrical property, so it can be attracted by atoms which show negative electrical property, while nitrogen atoms of N235 show negative electrical property, so it can combine with isothiocyanate. Therefore, isothiocyanate can be separated. Take isothiocyanate as an example, this paper aims to discuss the technological conditions and extraction mechanism of N235.The results of extraction showed that pH, concentration of isothiocyanate, phase ratio(O/W) and time are all the influencing factors and the optimal conditions are as follow: pH=9.0, O/W=3.0, time=10min, [isothiocyanate]=0.5%. The extraction rate at the optimal condition for one time is 90.86%.Verify the extraction efficiency by the extraction solution of radish seed, it can be proved through extraction, re-extraction, vacuum concentration and high performance liquid chromatography that N235 can extract isothiocyanate effectively.
