| Tetramethyl pyrazine(ligustrazine,TMP)generated by maillard reaction,is produced in the process of fermentation and starter making,into the Chinese liquor by distillation.As the demands of the consumers’ rational consumption,consumers pay more attention to the health functions of the liquor.Choosing this topic to establish the methods of tetramethyl pyrazine detection,in the process of liquor production tetramethyl pyrazine production process and influence factors were studied,and the tetramethyl pyrazine of study on physiological health functions.Through research(1)A capillary column,packed column gas chromatography method has been established to detect tetramethyl pyrazine in Chinese Liquor.Sample was injected into gas chromatography directly without pre-treatment;(2)A quantitative determination pretreatment method,the Headspace-solid phase microextraction has been established.(3)Studiying and analyzing the tetramethyl pyrazine content change during different production process.In the first 24 hours of stacking fermentation,tetramethyl pyrazine content increases slightly.The content of tetramethyl pyrazine in the last 20 days of was fermentation unchanged almost.(4)The contentof tetramethyl pyrazine,and the quality of liquor are studied under different conditions.The content of tetramethyl pyrazine in the entire process of accumulation,fermentation,has increased.Accumulation before 24 hour,tetramethyl pyrazine in growth is slow,pit entry fermentation on the sixth day,until the tetramethyl pyrazine levels of growth.At the time of carbon nitrogen ratio of 1:10,with professional evaluation,the final score of 90 on a scale of(100).(5)by monitoring the number of platelets in extracorporeal circulation and function change,from the level of molecular biology to discuss extracorporeal circulation caused by the rule of platelet activation,four tests showed that the effect of methyl pyrazine is a kind of exact,less side effects of platelet protectant,in clinical extracorporeal circulation may have certain application value. |
