Aiming at the industrialization citric acid fermentation process optimization is studied.Firstly analyzes the aspergillus Niger at various stages of the process of metabolism related characteristics,and established the theoretical foundation of the aspergillus Niger citric acid fermentation process.Then,through the method of experiment study the influence of various factors on the citric acid fermentation index.Studies have shown that improving the initial sugar fermentation tank can significantly improve the final fermentation acidity,but various initial sugar fermentation efficiency,when the initial sugar is higher than 17%,the trend of decline in the fermentation efficiency,thus determine the most appropriate initial sugar was 16%-17% citric acid fermentation.Through the study of inoculation seeds cans,the cultivation of the fermentation tank temperature,the proportion of turbid liquid fermentation tank,seeds cans of age,the effects of dissolved oxygen on the fermentor,determines the optimum quantity of seed tank is 10%;Fermentation tank is most suitable for the cultivation of the temperature is 36 to 38 ?;Fermentation tank is the most suitable feeding fluid of16-18%;Seed tank is the most suitable for the cultivation of the kind of age 28 hours;We also obtained the too high or too low dissolved oxygen will be against the whole fermentation results.Through to the citric acid fermentation process of bacteria species,ways,hazard analysis,put forward the solution to mixed bacteria pollution is the key to "prevention",focus on prevention.
