China is an agricultural country, rice output ranked firstly in the world. However, rice bran, the main byproduct in the process of refining rice, which contains oil, protein, phytic acid and other natural nutrients, has failed it be effectively used. The reversed micellar extraction system can separate and extract the plant proteins and oils at the same time, so it will play an important part in the comprehensive utilization of rice bran resource. This thesis mainly studies the extraction technology of rice bran and oils by revered micellar extraction system. As we know, the rice bran protein is more difficult to be extracted compared with other plant proteins, so we apply ultrasonic to the reversed micellar extraction system, and make a cooperation between before-extraction process and after-extraction process of rice bran protein and oils under the influence of ultrasonic or not.By this cooperation we optimizes the technology of before-extraction and after-extraction,besides, have an analyzation on features of extracted oils and protein.When applying the ultrasonic to reversed micellar extraction system, the rate of before-protein extraction can be 10-20%. The single factor experiment finds that the main influence factors on the before-protein extraction were: KCl concentration > Wo value >the amount of samples > ultrasonic power > SDS concentration > pH > time. What is more,by orthogonal experiment, we can conclude the best conditions of before-protein extraction are as follows: SDS concentration of 0.08 g/ml, Wo value 30, 0.015 g/ml for the amount of samples before, ultrasonic power 225 w, 40 min extraction time, increase water soluble pH7.5 and KCl concentration 0.25 mol/L. Under this condition, the before-extraction rate can be 86.96%.Based on the single factor experiment, by the response surface optimizations, the best solution for after-extraction assisted with ultrasonic were: after the extraction water pH value of 9.02, 28.4 min after extraction time, concentration of KCl 1.14 mol/L, after the rice bran protein extraction rate of theory, the optimal value of 86.26%. In theory, the extraction rate is 86.26%, while the actual average rate is 85.48%, the relative error is0.91%, so the design model is consistent with facts, and has good fitting.After researching on the functional properties of extracted rice bran oil and protein,we can see that it has good physical and chemical properties. Therefore, the reversed micellar extraction system has a good development prospect on the application of plant resource.
