As a Chinese national liquor, Rice wine has a long history and cultural connotation. Rice wine can not only be a single drink, also can be used as a health beverage. In the ancient records, rice wine is used to be an ingredient added to the medicinal herbs. Chinese rice wine is known as "It's out of this world", "Number one famous Oriental wine." With China's sustained and rapid economic development, people's living standards and quality of life continues to improve. With the rising purchasing power, people's consumption concept continues to mature, health wine consumption has a steady growth trend. In addition, the improvement of the quality of life and health awareness, the vast number of consumers has a new concept for enjoying healthy, nutrition,s drink. Chinese traditional rice wine just meet the needs of the times.This article introduces Zhejiang tapai rice wine, Fujian Huizelong rice wine, Shandong Jimo rice wine, Shaoxing Kuaijishan rice wine and Shaoxing daughter red rice wine, and takes them as the research objects. For rice wine containing the active points were tested and analyzed in this paper and with the contents of active components in wine do system of. Experiments show that: rice wine is rich in polyphenols. The contents of polyphenols in five samples are Jimolaojiu rice wine 625.62?g·ml-1. Tapai rice wine 544.39?g·ml-1; Hui Zelong rice wine in 303.92?g·ml-1; Kuaijishan rice wine 430.56?g·ml-1; daughter red rice wine 379.83?g·ml-1. In addition, Rice Wine is rich in amino acids and amino acids, which contains essential amino acids. Experiments show that the rice wine with the highest free amino acid content is Jimolaojiu rice wine, its content is 3.50g·L-1, The content of free amino acid was the same with Hui Zelong rice wine. Tapai rice wine is 3.20g·L-1, daughter red rice wine is 2.96g·L-1; Kuaijishan rice wine is 2.66g·L-1.Based on the resulf of active substances in rice wine, the antioxidant capacity of rice wine is also tested. When the concentration of the sample was 8%, 60 h, Jimolaojiu rice wine oxidation inhibition rate is 90.67%, Kuaijishan rice wine is 81.60%; daughter red rice wine is 80.17%; Tapai rice wine is 81.18%; HuiZelong rice wine is 81.49%. In addition, the ability of clearing free radicals is tested too. The result shows that: with the increase of the sample concentration, the ability of clearing free radical is getting stronger, when Jimolaojiu rice wine sample concentration is 30%, the free radical scavenging rate is 98.35%; daughter red rice wine sample concentration is 30%, the free radical scavenging rate of 95.08%; Kuaijishan rice wine sample concentration is 30%, the free radical scavenging rate is 92.56%. Tapai Shaoxing rice wine samples the concentration is 100% and the free radical scavenging rate is 80.80%. Hui Zelong rice wine sample concentration is 100% and the free radical scavenging rate is 70.13%.According to the results obtained in this study, combined with modern authoritative research report, to establish a scientific and comprehensive China rice wine health value evaluation system, so that the health benefits of Chinese rice wine can have a scientific basis.
