With the fast-development of economic industry and processing industry of cherry, the lack of the processing for cherry by-products will limit the fast-development of economic industry and processing industry of cherry. The cherry seeds contain abundant oil, especially rich in unsaturated fatty acid, and have the efficacy on hypolipidemic, preventing cardiovascular disease, easing blood pressure, anti-aging and etc. In the paper, the extraction and refining process, the typical properties and fatty acid compositions, the toxicology and the function of regulating lipid and anti-aging for the cherry seed oil from the cerasus pseudocerasus and cerasus avium were investigated. The main research results are as follows:1. The composition of fatty acids in the seeds of cherry was analyzed by GC/MS. And the cherry oil consisted mainly of pentadecanoic acid, palmitic acid, heptadecanoic acid, stearic acid, oleic acid, linoleic acid, linolenic acid and eleostearic acid. The unsaturated fatty acid content of cerasus pseudocerasus seed oil was 841.7mg/g. and the unsaturated fatty acid content of cerasus avium seed oil was 813.8mg/g.2. The optimum technical condition by organic solvent showed that 76.05% cherry oil can be extracted for 4.1 h,69.4?,7.5ml/g solvent and D50380?m particle size.83.78% cherry oil can be extracted for 52min,64?,9.7mL/g solvent. D50 55?m particle size and 60kHz ultrasonic waves by ultrasonic-assistant. And 81.44% cherry oil can be extracted for 113s, 46.5?,60W ultrasonic waves,155s.800W microwave.9.4mL/g solvent and D50 250?m particle size by ultrasound simultaneous microwave assisted.3.81.05% degumming rate can be gained for 36.1min,45.3? and 13.85% water. And 98.99% deacidification rate can be tested for 37.5min,40?,37% NaOH solution and 0.25% alkali quantity.4. A single dose at 4000 mg/kg oral administration of cherry seed oil was shown to be nontoxic. The data of bacterial reverse mutation test, mammalian erythrocyte micronucleus test and mouse sperm abnormality test compared was negative. The data from 28-day oral toxicity test were not significantly different between tested groups and control groups. These results indicate the cherry seed oil did not produce any significant toxic effect and was harmless natural available resources for food, cosmetics and medicinal industry5. The method of lipid metabolism disorders model in mice was adopted to evaluate the effects of cherry seed oil on plasma and liver lipid parameters. The results indicated that cherry seed oil can reduce the levels of total cholesterol and triglyceride on plasma and liver lipid of the model mice, while it can raise the levels of high density lipoprotein. Meanwhile, the method of D-galactose peroxidant injury model was adopted to evaluate the effects of cherry seed oil on plasma, brain and liver parameters in mice. The results indicated that cherry seed oil can be raise the activity of superoxide dismutase on plasma, brain and liver parameters in mice, while it can lower the level of malondialdehyde. So cherry seed oil can prevent arteriosclerosis and resist caducity.
