As a kind of peculiar color wheat black wheat is arising more and more attention from people because of its special healthcare functions. The further study of black wheat is essential in which to provide the theoretical basis for the further development and make positive effect on the diversified consumption. In this study the residue of black wheat bran was used to extract natural pigment, water-soluble pentosan, dietary fibre, water-insoluble pentosan and protein etc. And the best extraction conditions of was also determined. The main research results are as follows:1. Extraction of natural pigment from black wheat branAlcohol and HC1 was used to extract natural pigment and the yield of them is 14.5%.2. Extraction of water-soluble pentosan from black wheat branWater was used to extract water-soluble pentosan and the best extraction conditions is determined:1:25 ratio of solid to liquid,80? extracting temperature,75min extracting time and 2 extracting times. In the best index of extraction, the receiving rate of water soluble pentosan is 1.4%.3. Extraction of dietary fibrea-amylase was used in DF extracting to resolve starch that exists in the residue from which water-soluble pentosan has been extracted. The best conditions is that 1% ?-enzyme concentration, pH of 6,60? enzyme solution temperature,45 min enzymatic hydrolysis time. In this condition, the yield of dietary fibre is 56%.4. Extraction and separation of protein and water-insoluble pentosanNaOH solution was used to extract protein and water-insoluble pentosan. This study determined the best conditions that 1.4% alkali concentration,100? extracting temperature, 70min extracting time and 3 extracting times. In this condition, the yield of protein is 6.2% and water-insoluble pentosan is 7.3%.Sevage reagent was used to separate protein and water-insoluble pentosan. The best separation conditions was determined that the volume ratio of Sevage reagent and sample 1:2, 2 times separating degree, in which we can get 4.0% protein and 6.8% water-insoluble pentosan.5. Decoloring of water-insoluble pentosan extraction solutionThe method of decoloring of extraction solution is by the useage of activated carbon effected on the water-insoluble pentosan. The optimum condition is that 5% activated carbon, 70? destaining temperature and 50 min destaining time in which the decoloring rate of the solution is 67%.
