| On the basic ingredients analysis of the purple sweet potato peel, studied the extraction, drying and other processes, developed a purple potato peel dietary fiber products and analyzed its physical properties and quality indicators. Through studying the quality variation of the purple potato peel dietary fiber powder during storage, established the purple potato peel dietary fiber storage life estimation model.Dietary fiber’s extraction rate as the assessment indicators, based on single factor experiments, used orthogonal experiment to optimize the extraction process of the purple potato peel dietary fiber:addition of α-amylase 1.0%, solid to liquid ratiol:15, pH 6.5, keep for 120min under the conditions of 75℃; then cooled, pH was adjusted to 4.5, the added amount of glucoamylase 0.8%, keep for 60min under the conditions of 60℃.On the basic investigation of using hot air drying and vacuum freeze-drying to dry purple potato peel dietary fiber, especially studied the hot air drying characteristics of purple potato peel dietary fiber. Water holding capacity as the assessment indicators to determine the drying process:material thickness 6mm, drying temperature 65℃, drying wind velocity 1.0m/s.Through the morphology study of purple potato peel dietary fiber powder, the bulk density of the purple potato dietary fiber powder is 0.36±0.021g/cm3, the structure of purple potato dietary fiber powder is porous and cellular by Scanning electron microscopy, studied the physic-chemical properties of the the purple potato peel dietary fiber powder, water-soluble was 2.74±0.18%, water holding capacity affected by temperature more significantly.Color as the quality factor, researched products’ quality variation in the storage period, concluded that the color of purple sweet potato peel dietary fiber powder changed follow a reaction rule, established shelf life prediction model of purple potato peel dietary fiber powder:1/d= 0.0002 T-0.0563Bread for the object, and studied the application effect of purple potato peel dietary fiber powder, the results showed that added the proper amount of purple potato peel dietary fiber powder can increased a certain amount of dietary fiber and improved diet structure., and it will not affect the quality of the bread. |
