Edible vegetable oil is the main source of fatty acids for human beings, the content of trans fatty acids of the edible vegetable oil will be an important factor to influence the intake of trans fatty acids. Over the years, foreign experts had number of researches on the harm of trans fatty acids on the human body, these studies had shown that trans fatty acids on human cardiovascular system, infant growth and development has great influence.(1) 26 sunflower oil samples were studied. The trans fatty acid content of the samples were detected by gas chromatography. The results showed that only one sample trans fatty acid content was more than 1% in 11 self pressing oils, which was higher than the same types; 7 samples of trans fatty acids content were all low than 1% in the individual workshop oils, the highest reached 0.801%, the lowest content was 0.258%; 6 samples of trans fatty acids content were more than 1% in the 8 refined oils, the highest reached 2.203%. Processing excessive has brought the rise of trans fatty acids content.(2) The research of sunflower seed oil quality in Shihezi founded that sunflower oil conformed to the national standard concentrated in refined oils which was produced by certain scale of oil production enterprises, especially the national well-known brands, the oil quality of these was reliable, the packaging and label were also very standard. Problem oil products most concentrated in individual workshop oils produce by the region's plant.(3) Comparing the different between fully refined oils and "natural" oils by individual workshop of trans fatty acids content and quality analys is, the results show us, in parts regions of shihezi the “natural” oils meet the national standard of level 3 oil on average. Some samples do not even reach level 4 oil standard, the low degree of processing, differ with national standard quality more, quality is low; Advanced refined oil, high degree of processing, the quality is relatively high, but only individual product can reach the national standard for first grade oil and the 23.1% sampling products and 42.3% of t he acid value and peroxide value of the products not meet the national standard. The unqualif ied of the sampling rate is 76.9%. At the same time.The inhabitants of often buy oil in bulk need to pay attention to the quality, safety and health of the sunflower oil.
