The paper studied that the microencapsulations of cinnamaldehyde oil were mainly prepared of chitosan and its derivations and gelatin as wall and calcium chloride as crosslinking agent. The impacts of chitosan and its derivations content, gelatin content and calcium chloride content were researched. Quadratic rotary combinational design was applied to optimize the three conditions of chitosan and its derivations content, gelatin content and calcium chloride content. Based on the optimized process parameters, the microencapsulations of cinnamaldehyde oil were prepared, their properties were studied. The results showed that with the chitosan and its derivations content, gelatin content and calcium chloride content improving, the embedding rate of microencapsulation firstly increased and then decreased. When chitosan and its derivatives, gelatin and calcium chloride were in the most suitable conditions, the structure of chitosan and gelatin were formed by the electrostatic interaction of calcium chloride as crosslinking agent.This study conducted to determine the embedding rate of microencapsulation as an index, and the response surface design was used to obtain three regression equations. According to the three regression equations, the optimal process parameters were optimized respectively, and the results were corrected by the optimization experiments. The results showed: while the chitosan content was 0.6 g/m L, gelatin content was 3.2 g/m L and calcium chloride content was 2.1 g/m L, the embedding rate of microencapsulation was 51.05 %. While the chitosan hydrochloride content was 0.9 g/m L, gelatin content was 3.1 g/m L and calcium chloride content was 1.7 g/m L, the embedding rate of microencapsulation was 63.78 %. While the chitosan quaternary ammonium salt content was 1.1 g/m L, gelatin content was 3.7 g/m L and calcium chloride content was 1.7 g/m L, the embedding rate of microencapsulation was 61.45 %.Using the optimized process to prepare three kinds of cinnamaldehyde oil microencapsulations and study their moisture content, solubility, stability, heat resistance, light solution and against lipid oxidation. The moisture content of CM, CHM and CQASM were found to have the lowest moisture content from 2.5 to 3.5. The solubility of CM and CHM were poor, and the solubility of CQASM was good, and both of them were similar solubility in different p H conditions. With the storage time prolonged, the embedding rate of microencapsulation decreased, and the stability of CQASM was better than CM and CHM at different time. With the increase of temperature, the embedding rate of microencapsulation decreased gradually. At the same temperature, the stability of CM was better than CHM and CQASM. With the fluorescent lamp prolonged, the embedding rate of microencapsulation decreased gradually; the stability of CM is better than CHM and CQASM. With the increase of antioxidant treatment time, the peroxide value of microencapsulation increased gradually, and the antioxidant activity of CHM was better than CM and CQASM.
