There are kinds of minerals which are represented by crude ash in the wheat grain. Crude ash is also called to ash for short and it is one of important evaluation indexes while fixing level of flour. Ash content is an important testing item in the international and domestic trade of flour. So it is important to determine ash. The old method is to waste time and viogour. This article’s purpose is to establish a new rapid method to determine ash. We chose wheat from Henan province as experimental material and study on its regular about ash. Wheat flour was extracted by ultrasonic. Wheat of strong gluten, middle gluten and weak gluten were separately determined conductivity by optimum conditions from response surface methodology. And mathematical equations were established about conductivity and ash which was determined by national standard method. Use known conductivity to determine ash with this rapid and easy method. That is the new method to determine ash with conductivity method.The advantage of this method is rapid measuring speed, less labor and time, and energy source saving. The apparatus are simple and cheap.There is no difference between conductivity method and national standard method. The purpose of this paper is to provide theoretical basis and reference for rapid prediction ash in the later.This article established the model with different glutens and different spring-winterness, and studied on the wheat from different storage times and different areas.The results showed that:1.There is no difference from conductivity method and national standard method. The conductivity method mixed with ultrasonic extraction and conductivity instrument direct-reading. The soluble ions of wheat flour were extracted by response surface methodology. The results showed that the optimum technological conditions were ultrasonic temperature 49℃±1℃,materical-liquid 1:395,time 3.55h. Materical-liquid ultrasonic temperature and time were significant effect on conductivity. But there was no significant effect on pH. The value of pH stayed on 6.400±0.2.2.There was significant effect on wheat’s ash from different areas.The correlation coefficient was 0.9030 between area and ash. There was a strong correlation between them. There was no significant difference between Luohe and Gongyi about blue wheat ash.So the area of Shangqiu and Jiaozuo was.But there was significant effect between the areas of Luohe and Shangqiu, Jiaozuo, the areas of Gongyi and Shangqiu, Jiaozuo about blue wheat ash.3.The quadratic equation r2 of relationship curve between ash and storage times is 0.5810.There was significant effect on wheat ash from different harvest years.The correlation coefficient was 0.685 between harvest years and ash. Both of them were weak correlation.4.Fitting equation between ash and conductivity of strong gluten wheat was y=10-4×1600x+592.19 and r2 is 0.9801.There was higher correlation than other fitting equation. The relative deviation was from-4.868% to 5.317%.The ash of some kinds of wheat could not be predicted, but it could be predicted by logarithm model that was y=245.57e0.5578x. Fitting equation between ash and conductivity of middle gluten wheat was y=-1411.5×0.18x+700.02 and r2 was 0.7702.The kinds of wheat were separated by upper and lower limit to two parts.The model of upper limit was y=154.4x+368.69 and r2 was 0.9801.The relative deviation was from -1.831% to 1.822%.The model of lower limit was y=(14.992x0.25+7.6413)2 and r2 was 0.9821. The relative deviation was from -1.838% to 2.320%.Fitting equation between ash and conductivity of weak gluten wheat was lglgy=0.089lglgx+0.5053 and r2 was 0.9391. The relative deviation was from -1.5223% to 2.8347%.Fitting equation between ash and conductivity of all gluten wheat was y=502.920463x0.400236 and r2 was 0.7660.5.Fitting equation was separately set up about weak springness wheat and winterness wheat. The correlation coefficient was higher than the equation’s of all the wheat. Fitting equation between ash and conductivity of weak springness wheat was y=508.9x0.3723 and r2 was 0.8348.Fitting equation between ash and conductivity of winterness wheat and semi-winter wheat was y=275.98e0.4807x and r2 was 0.8716.
