With the development of society, people on Pork Quality requirements are also rising, how to improve the meat quality has now become the focus of livestock research. Intramuscular fat content of meat is an important indicator of quality assessment, and deepen their research is very necessary. Between intramuscular fat deposition and fat metabolism has a close relationship, and liver fat metabolism in fat metabolism, as an important part of intramuscular fat deposition is also a significant factor. Therefore deepen the study of liver fat metabolism helps to find its intramuscular fat deposition on the molecular system.In this study, the first Bama pigs diet adding 10% sugar and 15% fat in the experimental group, and build a model of the fat pig. Experimental group and control group, there are obvious differences in pH, color, water holding capacity and shear force of meat quality traits. Blood physiological indices related to lipid levels has a significant change, which are changes have close relationships with fat traits. Then the experimental group and the control group of liver samples transcriptome sequencing, got 613 genes in the experimental and control groups of differentially expressed in the liver.To analyze the 613 differentially expressed genes and found that MOGAT2 and NKX2-3 fatty substance absorption related genes, also has the SCD and ELOVL family such as regulation of fatty acid metabolism related genes. GO enrichment of differentially expressed genes were found that these differentially expressed genes mainly enriched in the single-organism process, oxidation-reduction process, lipid metabolic process, etc., KEGG enrichment of these differentially expressed genes in Fatty acid metabolism signaling pathway, Fatty acid prolonged signaling pathway, PPAR signaling pathway, Glycerolipid metabolism signaling pathway and the other signaling pathways associated with fat metabolism.In the RNA-Seq were also found that there are a lot of alternative splicing、 SNPs and InDel differences between the experimental groups and the control groups, which occur especially the alternative splicing, which may cause direct results of the different encoding the protein in the experimental and control groups, and then affecting the metabolic processes. But whether the phenomenon of the experimental groups and control groups in the physiological character of the impact remains to be further research.This study is to use the RNA-Seq method, estimate the influence of molecular biology mechanisms of liver fat metabolism, from the perspective of liver fat metabolism in meat quality research, to improve pork quality to provide new ways.
