22 kinds of red flesh crabapple flesh and 6 kinds of crabapple flowers were taken as materials. The content of total flavonoids and total polyphenols were measured with UV photo-spectrometer. DPPH radical scavenging ability and ABTS radical scavenging ability were carried out in antioxidant activity evaluation. HPLC-DAD was applied to test the composition and content of polyphenols. The correlation was analyzed with SPSS software. This study aiming at choosing strong antioxidant capacity red flesh crabapple fruits and edible crabapple flowers with the development of prospect.The results showed that 22 kinds of red flesh crabapple flesh total flavonoids contents were 87.15-1508.80 mg per 100 g of dry fruit and the total polyphenols were 56.44-431.80 mg per 100 g of dry fruit. M. ‘Indian Magic’, M. ‘Red Garden’, M. ‘Louisa’ and M. ‘Indian Summer’ with higher commodity character were chosen as the varieties that contained higher polyphenol, flavonoids and antioxidant capacity. Bud starting stage of M. ‘Snowdrift Crab’ and bud opening stage of M. ‘Royalty’ are used for making edible crabapple flowers with highest antioxidant capacity.11 kinds of pigments in red flesh crabapple flesh were detected by HPLC, including cyanidin-galactoside, cyanidin- rutin, cyanidin-arabinopyranoside, gallic acid, catechin, epicatechin, chlorogenic acid, rutin, coumalic acid, phloridzin and quecetin. Further study showed that gallic acid and rutin existing signifigant correlation with antioxidant capacity. There were 17 kinds of pigments in crabapple flowers, including gallic acid, procyanidin B1, procyanidin B2, catechin, syringic acid, phloridzin, chlorogenic acid, caffeic acid, coumaric acid, ferulic acid, hyperin, rutin, isoquercitrin, avicularin, reynoutrin, avicularin and cyanidin-galactoside. Among them syringic acid, hyperin, reynoutrin and cyanidin-galactoside existing signifigant correlation with antioxidant capacity.
