This paper studies the development of Catering in Xi’an during the Republic of China, and explore the transition of the spatial distribution of restaurants, the development of special meals, and the relationship between the Catering and social activities. The whole paper consists of six parts.The "Introduction" part put forward the problems of discussion:how does the Catering develop in Xi’an during the Republic of China? What are the characteristics of spatial distribution of restaurants? What is the relationship between Catering and social activities?The first chapter "The Development History of the Catering in Xi’an during the Republic of China" Mainly analyse the development history of Catering during the Republic of China in Xi’an from three stages. During 1927-1937, the development of the Catering is in its infancy, the number of restaurants are rarely on the market; during 1938-1945, the number of restaurants sudden increase, the overall trend was upward in spite of any fluctuations in this period,. After 1946, according to data; there is a drop on the number of restaurants, but the overall number is still large. Based on analysis of the Catering development in different stages, it is concluded that the development of Catering and the social environment (e.g., political status, economic conditions, traffic conditions, natural disasters, etc.) have greatly dependent. Any changes of social environment will impact the development of Catering.The second chapter "The main types of the Catering in Xi’an during the Republic of China, with the help of "Coreldraw’technology and archives, the author make the space distribution of restaurants during the Republic of China. From the chart, food market move with the business district. In the middle period of Qing Dynasty, food market mainly concentrate in the South Gate and West Street, during the period of the Republic of China, Which have moved to the East Street, ShangRen Road, Bell Tower area and so on. There are three main types of the restaurants in the market:upscale restaurants, popular restaurants and current vendors. The distribution of three kinds of restaurants is obvious difference, East Street, as the emerging commercial district, which distribute most of upscale restaurants, near the train station and some streets, some popular restaurants and vendors are mostly located in there, meanwhile, operators began to pay attention to comprehensive management, Internally, who controlled costs, and foreign, mostly attached great importance to advertising and competition.The third chapter "special meals development" through comprehensive hotel, western food, halal food and private restaurant four cases studied, which prove that the diversification trend of Xi’an food market obviously during that period. Simultaneously it also verifiey the pluralistic development of social economy of Xi’an.The fourth chapter "the Catering and city social development" analyse the relationship between the Catering and political activities, social activities and cultural activities, which further demonstratee that it is the perspective to understand the social life."Conclusion" part responds to the problems proposed in the "Introduction" part. The development of Catering during the Republic of China in Xi’an have experience a process from infancy to development to slump, and its spatial distribution has experience a process from centralized to decentralized to selectively concentration. These changes are relied on the political environment, economic status, traffic factors and regional culture and so on. The article finally proved that it is a way to understand the social life through the development of the Catering at that time.
