The purpose of this project is to produce a water soluble phytosterol nanoparticle(PSN), and make a basic study of its application in soymilk. This paper systematically investigated two different methods in producing PSN: anti-solvent method and Nab technology(Nanoparticle albumin-bound technology).And used a special 7S-riched soybean to produce a functional soymilk enriched with phytosterol. The results are as follows:Produced PSN with anti-solvent method, founded the optimum preparation technology and study its characteristics.Ultrasonic treatment can decrease the size of PSN. The best concertration of organic phase and aqueous phase was 2.5% and 1.0%, and the best emulsifier was sodium caseinate(CS). Loading rate of PSN was 65.45%, phytosterol crystallinity of PSN was decreased and the phytosterol solubility of PSN was improved 58 times.Produced PSN with Nab technology, founded the optimum preparation technology and study its characteristics. Heated SPI showed a better stabilization effect than SPI and 7S.Size of PSN increased with the SPI concertration.At the perfect SPI concertration(1%), PSN had a small particle size(208.6 nm) and showed a very good redissolving ability.When the SPI concertration was too low or too high, the redissolving ability of PSN was bad.PSN preparated by the mixture of SPI and STE had perfect characteristics, such as small particle size(151.17 nm),high phytosterol content(19.14%) and loading rate(62.02%),especially when the STE concertration was betweent its CMC,such as 0.4%.When the STE addition was too low or too high, the stabilization effect of PS decreased.Phytosterol 7S-soymilk was produced with common wet method by 7S riched soybean and PSN produced with anti-solvent method and Nab technology.Characteristics of phytosterol 7S-soymilk were studied, such as the particle size, the stability, the inoxidizability and so on. Phytosterol content of soymilk remained unchanged after sterilization,and the addition of PSN improved the stability and viscosity of soymilk.The PS/7S soymilk had a very good quality,its protein content and phytosterol content were 4.3% and 2.5 mg/m L,its particle size、zeta-potential and scavenging rate of hydroxyl radical were 0.25 μm 、-31.45 mV and 71.77%.
