Comparing the effectiveness of color-protection of different reagent, 0.05% citric acid and 0.1%ascorbic acid was been chossen.The best conditions of enzyme treatment : enzyme added is 0.15%(0.1% pectinase, cellulase 0.05%.), enzymolysis temperature 50 ℃,enzymolysis time 2 h, enzyme solution PH = 4.5; Using high-speed centrifuge for a kind of seed melon concentrate juice for clarification, centrifuge speed of 10000 r/min for 10 min would be the best. On this condition.the colour of seed melon concentrate juice is light yellow, a better translucency, fine and uniformly distributed organization status, no visible impurities, a kind of watermelon juice concentrate.2..Seed melon concentrate juice, on average, juice yield was 79.74%, the Absorbance value was 7.2, transmittance was 94%; the soluble solids content was14.3%, total acid is 2.5 g / 100 g, the total number of bacteria was 58 / ml, the number of e. coli was 3/100 ml, bacteria is not checked out.3. The process of seed melon juice beverage, seed melon juice concentrate dosage was 20%, sucrose dosage was 6%, citric acid dosage was 0.3%.
