The experiments selected Summit Cherry for the study, in the entire logistics process, using near-infrared spectroscopy technology to build predictive models cherry quality nondestructive testing, selection of electronic nose technology and gas chromatography-mass spectrometry(GC-MS) techniques to detect cherry aroma quality, texture analyzer and the use of data analysis software(SPSS) for texture quality Summit Cherry comprehensive analysis. Test results were as follows:(1)Transport linkIn the control group, the rate of good fruit, bright index, chromaticity index, hardness, total acid(TA) and V_C content were in a better level than the other four treatment groups. Low temperature oscillation 40 min group with higher levels of soluble solids content(SSC) and sugar-acid ratio(SSC/TA); LDA and PCA analysis of the cumulative contribution rate of electronic nose were 94.69%, 99.31%. Accordingly, the cherry quality could be well separated by electronic nose during transport links.(2)Storage linkIn CS-5d, CW-1d, DW-20 d, the Summit Cherries got the best organoleptic qualities; Qualitative detection of NIRS, correction model cross-validation correlation coefficient(R2cv) and error correction coefficient(SEC) were 0.9344, 0.2007; NIRS on TA, SSC, SSC/TA content quantitative detection, the R2 cv and SEC of calibration model were 0.8617, 0.0375, 0.9451, 0.4329, 0.9287, 0.5761.The correlation coefficient(R2p), the prediction error coefficients(SEP), the relative analytical error(RPD) of prediction model were 0.8586, 0.0401, 3.7, 0.9247, 0.4425, 3.9, 0.9108, 0.7536, 2.7; NIRS on quantitative detection of flavonoids and V_C content, the Rp, SEP, RPD of prediction model were 0.9301, 0.4308, 3.5, 0.8493, 0.2253, 3.3;The Results of electronic nose’s LA analysis, detection of Summit Cherries aroma most sensitive sensors were W1 W, W2 S, W1 S. LDA total contribution rate of CS, CW, DW group were 97.43%, 97.24%, 98.23%; HS-SPME-GC-MS test results showed that volatile substances were mainly alcohols, aldehydes and esters, LA analysis of this conclusion consistented with the electronic nose. High content of Summit Cherries volatile substances were trans-2-hexylalcohol, benzyl alcohol, hexanal, cis-3-hexenal, benzaldehyde, 2-methyl-hexanoic acid; Cherry freshness inflection of CS, CW, DW group were 5d, 4d, 20 d. Thence, NIRS, electronic nose, HS-SPME-GC-MS could be accurately and efficiently on the quality of the storage part of the Summit Cherries detected.(3)Shelf linkPhysical and chemical test results showed that Cherry at lower temperatures could be maintained at a good level sense, fluctuations and high temperatures were not conducive to their shelf-life quality, when CS group shelf 3d Cherry with the best organoleptic qualities; The LDA results of electronic nose, cumulative contribution of CS, CW, BW group were 92.37%, 93.96%, 91.44%, The cumulative contribution rate of PCA were 98.21%, 99.18%, 98.85%; The type of content and volatile components of the three groups treated differently by detecting of HS-SPME-GC-MS, quality deterioration rate of CS group slower than the other two groups; Texture analyzer test results showed that the hardness, elasticity, cohesiveness, chewiness, resilience and adhesion increased with the extension of the shelf life of the corresponding changes. Therefore, the electronic nose, HS-SPME-GC-MS, texture analyzer were applied to detect cherry during shelf quality was scientific and feasible.(4)Establish fast online evaluation system of cold chain logisticsApplication of physical and chemical indicators, NIRS, electronic nose, HS-SPME-GC-MS, texture analyzer to detect Summit Cherries’ quality during cold chain logistics. The results showed that detection results of different testing methods could confirm each other.
