The preservation performance of chitosan-starch composite films loading natural antibacterial agent on kyoho grape was investigated in this paper, thus providing new insight into extending the shelf life of such perishable fruits as fresh grapes. The study included the following parts:Firstly, the Botrytis cinerea was used as grapy pathogenic strain, which was inoculated onto Kyoho grape. The pathogenic process was evaluated through sensory evaluation, measurements of the pectinase and peroxidase activities, as well as the respiration strength. The results revealed that after inoculation with Botrytis cinerea, the activities of pectinase and peroxidase, as well as respiration strength increased greatly, causing the pathogenic effects.Secondly, the preservation performance of chitosan-starch composite films loading Nisin and Natamycin on kyoho grape was investigated.The kyoho grape was dipped with blank chitosan-starch film-forming dispersions (FFD), or FFD loading Nisin and Natamycin alone or in combination, and then stored at room temperature (RT) (22-25 ℃). The results showed that during storage, the chitosan-starch composite film loading Natamycin could not only inhibit pathogen the propagation of grape surface pathogens effectively, but also decreased the respiratory intensity and water loss rate of the grapes significantly. In addition, the preservative-loaded films could also reduce the consumption rate of nutrient materials and the decline rate of titratable acid (TA) contents, whereby prolonging the shelf life of kyoho grapes. In addition, the films containing Natamycin reveals superior preservation performance, which increased by 25.64% compared to PE.Thirdly, based on the previous study, the kyoho grape was treated with blank control, FFD loading Natamycin, and grape refreshing films, which were then stored at room temperature. The results showed that during storage, Natamycin-loaded film had certain barrier function against water and gas. The film could also reduce weight loss rate, and restrain the respiration,and reducing the dropping speed of reducing sugar and titratable acid contents. And compared to the grape refreshing film the good grape rate of chitosan-starch composite films loading Natamycin increased by 20.91%,so as to ensure the quality of grape and prolong the shelf life of grapes.
