Study On Oats In Controlled Atmosphere Storage

This test on oats as the research object, and three kinds of moisture content(12%, 13%, 14%), three kinds of storage temperature(15℃, 22℃, 30℃), three kinds of storage composition(N2, vacuum, air) for factors, 27 kinds of controlled atmosphere storage scheme was simulated storage. Studied the antioxidants content, storage indication(electrical conductivity, MDA content, fatty acid value), nutrition indication(reducing sugar, protein, fat), pasting, TPA and the application of antioxidants in storage and analysised the date. The results showed that:After 180 d storage, the antioxidants content gradually reduced, electrical conductivity, MDA content, fatty acid value increased, reducing sugar increases after the first down, protein content has a small amount of increase, fat content reduced, the peak viscosity, lowest viscosity, final viscosity of oat flour, hardness are increased, pasting temperature, attenuation values, regenerative values, springiness, cohesiveness, chewiness are decreased. 27 groups of experimental results is analyzed, the influence of degree of four factors on the antioxidants content is: storage time > storage gas composition > moisture content > storage temperature; factors influence on electrical conductivity, peak viscosity are: storage time > storage temperature > moisture content > storage gas composition; factors influence on MDA content, protein are: storage time > moisture content > storage gas composition > storage temperature; factors influence on fatty acid value, lowest viscosity, final viscosity are: storage time > moisture content > storage temperature > storage gas composition; factors influence on reducing sugar is: storage gas composition > storage temperature > storage time > moisture content; factors influence on fat is: storage time > storage temperature > storage gas composition > moisture content; factors influence on pasting temperature, attenuation values are: storage temperature > moisture content > storage time > storage gas composition; factors influence on regenerative values is: moisture content > storage time > storage temperature > storage gas composition.Use controlled atmosphere storage(N2, vacuum) and 15 ℃low temperature storage are better than the orthogonal group, maintain the quality of oat.
