Hovenia dulcis, also known as Guaizao belong to Rhamnaceae, is wild or semi-wild species widely distributing in China. In recent years, researchers have done a lot of research on functional ingredients of Hovenia dulcis peduncles, and found Hovenia dulcis peduncles rich in polyphenols, flavonoids and polysaccharides which have strong antioxidant capacity. In this study, The Hovenia dulcis fermented beverage has developed. In order to prove the beverage has a hangover Liver function, Its antioxidant capacity and animals experiment were measured. The results are as follows:1. Total polyphenol content of Hovenia dulcis was 213.04 g / 100 g, Total flavonoids content was 74.94 g / 100 g, Total sugar content was 72.91 g / 100 g, Moisture content was 54.34 %, Reducing sugar content was 51.76 g / 100 g, Protein content was 5.92 g / 100 g, Ash content was 3.48 g / 100 g.2. The optimum fermentation conditions of Hovenia dulcis lactic acid bacteria fermented beverage were material to water ratio of 1:4(g/mL), inoculum size 2 %, fermentation temperature 37 ℃, fermentation time 24 h. Under these conditions, the beverage acidity was 0.47 mol/L and the sensory score is the highest, HDLB not only has a unique flavor of lactic acid fermentation but has Hovenia dulcis natural fragrance.3. The experiment show that chitosan is the best clarifying agent suiting for HDLB. The optimum temperature of chitosan 70 ℃, The time was 1 h, concentrations was 1.4 g / L. under optimal conditions, transmittance was 95.3%.4. Total flavonoids, total polyphenol content of Hovenia dulcis lactic acid bacteria beverage was 35.18 mg / 100 mL, 65.86 mg / 100 mL. with the beverage was increased, DPPH clearance rate increased from 30.03% to 90.01 %, ABTS clearance rate increased from 17.95% to 88.63 %.5. Experiments show Hovenia dulcis drinks can reduce blood AST, ALT, TC, TG content, enhanced mouse liver SOD, ADH activity and increased liver GSH content, reduce the amount of mouse liver oxidation product of MDA in liver injury mice. Microscopic observation of liver pathology results show that HDLB can inhibit the swelling of liver cells, maintain normal morphology of liver cells. Thus, HDLB can effectively alleviate the liver damage of mice caused by alcohol.
