Objective:With the continuous improvement of people’s living standards, the pursuit of healthy concept of natural increase. As the largest producer of traditional apple cultivation and related products, China’s apple production is serious and superfluous, while the traditional method such as the concentrated juice cannot meet the actual needs of consumers.In order to obtain the apple residue in the dietary fiber to produce chewing tablets, it can be taken into account the advantages of nutrition and taste in the way of apple powder production. Method: Aiming at adjustment and perfecting of the spray drying process, we study systematically about the subsequent processing technology of apple dietary fiber sheet extrusion. Finally, we can obtain the following results and conclusions as follows: Conclusion:(1)The processing characteristics and physical and chemical indexes of 6 kinds of apples were determined, such as fruit shape index, soluble solid, moisture content, dietary fiber content, fat content, protein content, etc. In comparison of the 6 kinds of Apple physical and chemical indicators although Hanfu apples do not have significant advantages compared to other kinds of apples. But in the actual production process, Hanfu apples have big advantage over others in certain aspects such as less pulp waste, lower content of the titration acid, excess production, long shelf life and so on. Eventually, Hanfu apples become the best choice in this experiment.(2)By this chapter, the research results can be seen that the best spray drying process is to feed concentration 13%, inlet air temperature of 170 ℃ peristaltic pump speed 325 r/h. The obtained apple powder gets the best quality and the highest rate of powder collection. It is 7:3 for the ratio of substrate to dry agent, malt dextrin selected for the best choice. With optimizing the parameters of stable operation, the actual determination of the set of the group is 23.27%.(3)We can get the best quality of apple fiber chewable with the 10% sucrose concentration,10% malt dextrin concentration,0.5% concentration of magnesium stearate conditions. The actual determination of the sensory evaluation group was 45 points, with optimizing the parameters of stable operation.
