Lentinus edodes is an important cultivated edible and medicinal fungus, the production was lower than Agaricus, was the world’s second-largest edible fungi. Mushrooms not only have an important nutritional and economical value, but also have a variety of medicine and health value, such as improving immunity, anti-tumor, lowering blood sugar and cholesterol and so on. In this thesis, mushrooms fruiting bodies were research object to use animal experiments as a carrier. Through successive four weeks mice fedding with certain concentration gradient solution mushroom flour, Lentinus edodes anti-fatigue, anti-hypoxia, antioxidant effects and appropriate mechanisms were studied to provide data and scientific basis for the development of mushrooms. The main findings as follows:1. Through exhaustive swimming test in mice and the determination of a variety of physiological and biochemical index such as energy reserves, metabolites and enzymes, this test researched mushrooms fatigue effect and its mechanism. Studies showed that:Compared with the control group, feeding different doses of mushrooms (the low, medium and high dose group) for 4 weeks could significantly improve mice swimming time, increased by 65.6%, 75.9% and 86.6%. Above-mentioned operating could also significantly reduce the generation of mice BLA, enhance the activity of LDH, and effectively remove the metabolites (such as BLA, BUN, etc.) produced by the body during strenuous exercise;could effectively protect the cell membrane peroxidation injury; reduced infiltration CK macromolecules out rate; significantly increased liver glycogen and muscle glycogen reserves, provide more energy; could significantly improve the activity of SOD and GSH-Px activity in liver, while reduce the content of MDA and effectively remove reactive oxygen species. Therefore, Lentinus edodes in mice had a good anti-fatigue effect, thus could improve exercise tolerance, delaying fatigue, and accelerate the elimination of fatigue,2. Through hypoxia tolerance test, sodium nitrite poisoning tests and determination of six indicators of peripheral blood in mice, the effect and mechanism of hypoxia of mushrooms was researched. Studies showed that:Compared with the control group, feeding different doses of Lentinus edodes for 4 weeks, could varying degrees add the low, medium and high dose groups hypoxia tolerance time in mice, the medium and high doses group significantly extended to 48.3%,25.3%; able to extend the low, medium and high dose groups sodium nitrite poisoning survival time of mice, in which the medium and high groups differently extend by 19.8% and 24.1%; increased Hb levels in mice, thus improving the oxygen utilization; RBC in mice effectively enhanced, which increasing blood oxygen association; HCT volume increased in mice. Therefore, Lentinus edodes could improve hypoxia tolerance and hypoxia tolerance of acute intoxication state in mice under normal pressure environment.3. By measuring a variety of physiological and biochemical index in mice including total antioxidant capacity, antioxidant enzymes and metabolites, the test studied antioxidant effect and mechanism of Lentinus edodes. Studies showed that:Compared with the control group, feeding different doses of Lentinus edodes for 4 weeks, could varying degrees increase T-AOC in serum, whole brain and liver; significantly increased SOD activity in serum, whole brain and liver, while reduced the MDA levels in corresponding tissue; significantly increased serum and liver GSH-Px activity; able to reduce the whole brain MAO activity and improve cardiac POD vitality. Therefore, Lentinus edodes could increase the total antioxidant capacity and antioxidant enzyme activity in mice, remove excess free radicals produced by the body, simultaneously accelerate catalytic decomposition of harmful substances, effectively prevent or reduce oxidative damage caused by the free radicals, thus had a good antioxidant activity in...
