Food origin traceability is an effective way to ensure food safety, The key of food production traceability technology is looking for characterized effective index of the regional difference. Provenance, identification and protecting specialty products. There are more and more reports about implementation food origin traceability applying with mineral and organic composition fingerprint.The purpose of this paper is to study the content differences of mineral elements, nutrients compounds compounds in kidney beans from different regions, Researching the possiblity of mineral and organic composition fingerprint techniques for geographical origin traceability of kidney beans. 54 kidney beans samples were collected from heilongjiang(yian and baiquan) provinces of china during 2013. Using inductively coupled plasma mass spectrometry(ICP-MS) measure the concentrations of Na、Mg、Al、K、Ca、V、Cr、Mn、Fe、Co、Ni、Cu、Zn、As、Se、Rb、Sr、Y、Mo、Ag、Cd、Sb、Ba、La、Ce、Pr、Nd、Sm、Gd、Pt and Pb in kidney beans. Using kjeldahl determination GB 5009.5-2010 measure the contents of protein, The contents of ash were determined using residual method GB 5009.4-2010, The contents of fat were determined using soxhlet extraction method GB/T 14772-2008. And the soluble total sugar compound compositions of kidney beans were analyzed by anthrone colorimetry. Applying variance analysis, multiple comparison analysis, correlatioon analysis and linear discriminant analysis(LDA) in data analysis. Research and analysis the characteristics of the indicators in different regions, screening effective traceability index, to establish a reliable origin discriminant model of judging kidney bean of origin. The following results:(1) The contents of mineral element, nutrient compound were significant differences in kidney beans according to geographical origin. It was possible to identify the geographical origin of kidney beans using mineral elements and nutrients compounds fingerprint analysis technologies.(2) The concentrations of Ca、As、Mg and Pt were significantly different from different regions, and could distinguish the origin of kidney beans successfully, They were the reliable index using in kidney beans geographical origin traceablity.(3) The content of protein, fat, ash and total sugar in kidney beans were difference significantly in regions. They could be used as potential traceability indicators for kidney beans.(4) The origin traceability result of these fingerprint techniques were: the combination of mineral element and fingerprints>the mineral element fingerprints>the nutrient compound fingerprints.
