Sauerkraut fermentation agent is DVS active agent of producting fermented sauerkraut. A new type of composite sauerkraut fermentation agent has been developed in the lab recently, it has obvious advantages. According to sensory evaluation and molecular identification, the formulations fermented agent was ultimately determined to be:L.paracasei(L1):L. buchneri(L5):Bacillus coagulans(B.c)=1:2:3.The pilot production technology of the fermented agent is studied in the experiment. A series of processes are explored, such as optimization of industrial medium, enlarge culture, granulation of fermented agent and drying process et al, which laid foundation for product industrialization.Optimization and combination have been done on the component content of the industrialized medium by single factor and L16(43) orthogonal test. Considered the bacterial biomass and quality, the best composition combination of fermentation media is determined as corn saccharified liquid 6.5%, soybean meal hydrolyzate 5%, corn steep liquor 0.3%, K2HPO42g/L, MgSO40.5g/L, MnSO4 20mg/L.On the basis of shake flasks, the operating parameters of 3L automatic fermenter is explored and to be determined as pH=6.5,40℃, inoculation amount of B.c is 6%, the ventilation volume is at 0.5vvm, the stirring speed is at 200r/min, the inoculated ratio of three lactic acid bacterias is L1:L5:Be=1:2:4.6, The mixed culture lasts for 16h with the process parameters above, the total bacterial biomass achieves 2.37×109 cfu/mL, the proportion of three bacterias is 1:2.08:3.34, which conforms the proportion of new complex sauerkraut fermentation agent.On the basis, the volume of the fermentation system is expanded 10 times larger twice with the empirical formula,and the fermentation parameters of 30L fermenter is determined as follows:mixed culture for 18h at 40℃,170r/min, the ventilation volume at 0.28vvm, the total bacterial biomass can reach at 1.87x 109cfu/mL after fermentation, L1:L5:B.c=1:1.7:3.1.The parameters of 300L fermenter is as follows:the stirring speed at 100r/min, ventilation volum at 0.15vvm, mixed culture for 18h at 40℃, then the bacterial bioconcentration can be achieved 1.64×109cfu/mL, which decreased by 12.3% than the 30L, L1:L5:B.c=1:1.9:2.6, and it also conforms the proportion of new complex sauerkraut fermentation agent.Granulation and drying process of the fermentation agent is optimized, and the new complex particle sauerkraut fermentation agent is prepared. The product of fermentation agent is tested, the results show that the sauerkraut fermented by new mixed vegetable fermentation agent is much better than by natural fermentation on all aspects of sensory quality, nutritional quality and safety.According to test comparison, it is wiser to keep the product in 4℃ with packages of aluminum foil or EVOH material.
