Red jujube industry as one of the key categories, Xinjiang fruit industry development is growing rapidly, but the comprehensive utilization of defective jujube is the problem.This topic from the perspective of comprehensive utilization of red jujube starting,study on extraction of defective fruit from Hami jujube in technology of DF,provide technical support for comprehensive utilization of defective jujube and jujube residue.The main content of this research include that, optimization of determination method of the content of DF in Hami jujube defective fruit,screening method of extracting DF;By enzymolysis,enzyme chemical extraction of DF in Hami defective jujube set method(IDF, SDF) technology research,research on the part properties of the DF,at the same time conduct a comparative analysis,study on DF decoloration process. The results are as follows:(1) The TDF content of Hami defective jujube was 15.01%±0.09,content of IDF was 12.51±0.12, content of SDF was 2.31%±0.08.From the aspects of yield、hydration properties and effect on environment,It conclude that for the intergrated consideration,choose the enzymatic hydrolysis metho d and enzymatic chemical combination method for the technology methods and as DF extraction p rocess in Hami defective jujube,at the same time,conduct futher optimization and to obtain the opti mum extraction technology of DF in Hami defective jujube.(2) The optimum process conditions for enzymatic extraction of DF Hami defective jujube wa s:IDF,alpha amylase added 0.5%,neutral protease added 0.6%,liquid to solid ratio was 27:1,under th ese conditions,the yield of IDF was 13.04%(n=3);SDF, alpha amylase added 0.4%, neutral protease addition amount was 0.5%, the ratio of liquid to solid 25:1(mL/g),under the above conditions, th e yield of SDF is 3.05%(n=3).(3) The optimum process conditions for The enzyme chemical combination method of DF Hami defective jujube was:IDF,alpha amylase added 0.6%, alkali solution pH 8.5, alkali hydrolysis time was 60 min, ratio of liquid to solid 20:1,Under these conditions the measured IDF was 16.1%(n=3);SDF,alpha amylase added 0.6%,alkali solution pH 10, alkali hydrolysis time was 55 min,ratio of liquid to solid 15:1,Under these conditions the yield of IDF was 8.51%(n=3).(4) The best technological for decolorizing DF:IDF,The mass fraction of H2O2 is 9%, pH value for 10, decolorization time is 1.5h,the decolorization temperature of 55 ℃,the verified experiments are carried out under this condition(n=3),the decoloring after IDF whiteness(L) values for 75.02 ± 0.64; SDF, The mass fraction of H2O2 is 3%, pH value for 11, decolorization time is 1.5h,the verified experiments are carried out under this condition(n=3),the decoloring after SDF whiteness(L) values for 77.33±0.72.Based on the findings of this two methods of DF properties and yield,the results show that the IDFof Hami jujube defective fruit was extracted by enzymatic,SDF by enzyme chemistry combined extracted was more appropriate.the DF which extracted by Chemical combination of the optimized enzyme method,after decoloring treatment,by properties of the comparison results,the decoloring treatment improved properties of the IDF,but decoloring make the SDF biological activity decreased after treatment.
