Ferulic acid is a typical compound of phenolic acid. It has widely biological activities and had been applied in food additives, medicine, cosmetics and other areas. Phenolic acid are restricted the application in fat foods, because they have strong hydrophilic property. In this paper, we selected the ferulic acid and acetylferulic acid as the research object, four aromatic ester acetylferulate and four alkyl ferulates were synthesized. The purpose of the study is to enlarge the application in fat food. The main contents as follows:(1) Acetylferulic acid were synthesized by vanillin and acetic anhydride under Perkin reaction, which catalyzed by sodium acetate trihydrate, the yield of acetylferulic were 94.8% under optimal conditions. Ferulic acid and acetylferuloyl ahloride were prepared from acetylferulic, and the yield rate were75.2%,98.0%.(2) Four aromatic ester acetylferulate were synthesized from acetylferulic acid and aromatic alcohols. The four compounds are benzyl ester acetylferulate, phenethyl ester acetylferulate, phenylpropanol ester acetylferulate and cinnamyl ester acetylferulate. The structural of target compound was characterized by IR and 1H NMR, and we selected benzyl alcohol as a respresentative alcohol to optimize the reaction conditions. The results showed that the yield rate were 89.7%,74.2%,73.7% and 83.3%. (3) Four alkyl ferulates were synthesized by ferulic acid and aliphatic alcohols undermicrowave irradiation, which catalyzed by thionyl chloride. The four compounds are ethyl ferulate, isopropyl ferulate, butyl ferulate and tert-butyl ferulate. The structural of target compound was characterized by IR and 1H NMR, and we selected ethanol as a respresentative alcohol to optimize the reaction conditions. The results showed that the yield rate were94.5%,92.1%,93.6% and 56.0%. (4) The antioxidant activities of aromatic ester acetylferulate was studied by schaaloven experiment. The results indicated that aromatic ester acetylferulate had obviously antioxidant activities in lard oil and the benzyl ester acetylferulate showed the strongest antioxidant activity. The effect of 0.02% benzyl ester acetylferulate is similar to BHT, and the shelf life of them could be prolonged to 190 days at 20℃.
