Benzoyl peroxide (BPO) is the major components of flour Whitener. However, its excessive use would cause adverse affect to human health. Therefore, it is verry necessary to mensurate the content of BPO that added in flour. The nature that BPO can transform into benzoic acid (BA) under acidic conditions, regularity be used to experiments about mensuration of BPO. In this experiment, we chose acidity petroleum as the extraction and reaction solvent. And then detected the reductive product with gas chromatograph GC-17A (with hydrogen flame ionization detector).Such results showed that the calibration curve in linear relationship in the range of2.6×1017~0.5mg/mL, the correlation conffcient:0.996,RSD:1.1737%, the detection limit of benzoyl peroxide was3.12×10-13g/kg, the recovery was quite excellent, from89to97%for BA added. Finally, five kinds of sold flour were detected and the detection rate was40%. This method is more convenient and quicker, so it would be used widely.
