Tea, as a health beverage, posses many functional components, such as theanine, catechin and caffeine. This function of tea refreshing mainly because tea contains alkaloids active substances, which is a class of stimulants. Especially caffeine has the role of the central nervous excitement, it can make a clear head and improve the efficiency of thinking; at the same time, it can accelerate blood circulation, promote metabolism, and reduce fatigue. The study discovered and proved that it is mainly theanine to antagonize excitatory effects of caffeine in tea.Some scholars have found that it is less excited after drinking Pu’er tea than after drinking green tea, although Pu’er tea and green tea contains almost the same amount of caffeine. And the content of theanine in Pu’er tea is much smaller than it in green tea. After the pile-fermentation process, the contains ingredients of Pu’er tea have been to occur a series of chemical changes, such as oxidation, polymerization, condensation, decomposition, etc. And reduce complex compounds. Then, after fermentation, the Pu’er tea may produce some material to antagonize effect of caffeine.The contents of this paper:1. Comparative study of the caffeine of green tea and Pu’er ripe tea absorption in mice: Comparative study of caffeine absorption in mice after oral administration of Pu’er ripe tea, green tea and caffeine with three caffeine dose (5mg/kg,25mg/kg and50mg/kg). The results showed that the absorption of caffeine in Pu’er ripe tea was decreased, compared with the caffeine in green tea. And inhibition enhanced, with the oral administration’s dose of caffeine increases.2. Comparative study of the caffeine of Pu’er ripe tea extract layer absorption in mice: Comparative study of caffeine absorption in mice after oral administration of Pu’er ripe tea extract layer, the residue and caffeine with the caffeine dose of50mg/kg. The results showed that the particular ingredients affect the absorption of caffeine in Pu’er ripe tea is Pu’er tea n-butanol layer, and it may be of tea pigment or specific polyphenols.3. Comparative study of the caffeine of Pu’er raw tea and Pu’er ripe tea absorption in rats:Comparative study of caffeine absorption in rats and excretion from rats after oral administration of Pu’er raw tea and Pu’er ripe tea and caffeine with the High-dose of caffeine (135mg/kg). The results showed that the absorption of caffeine in pu’er ripe tea was significantly decreased, and Pu’er ripe tea promote the unabsorbed caffeine excreted.
