Taking wine grape "Cabernet Gernischet" as experimental material, the regulated deficit irrigation treatment during the pre-flowering, young fruit period, pre-flowering+young period, swollen period, pre-flowering+swollen period, version and maturation period were conducted, the paper studied leaf water potential, growth and development of leaf and berry, photosynthesis of leaf, sucrose-metabolizing enzymes activity of grapevine.The study results as follows:1. The RDI treatment inhibited cluster growth, the cluster growth reduced significantly during pre-flowering, young fruit period and pre-flowering+young fruit period, but not affected significantly during swollen period, pre-flowering+swollen period and version. Pre-flowering, pre-flowering+young fruit period showed a strong water compensation effect.The RDI treatment decreased longitudinal and transverse diameter, single fruit mass, fruit volume during main growth period of grapevine.2. The RDI treatment reduced the total chlorophyll, chlorophyll-a and chlorophyll-b of leaves, RDI decreased chlorophyll-a significantly during version and maturation period, increased carotenoid content in the young fruit period and pre-flowering+young fruit period, reduced carotenoid content in version and maturation period. In addition, RDI could significantly increase MDA and Pro content of leaves in grapevine.3. Under the regulated deficit irrigation, the treatment reduced net photosynthetic rate, stomatal conductance, intercellular CO2concentration and transpiration rate of grapevine significantly, net photosynthetic rate and stomatal conductance showed bimodal curve during, RDI reduced leaf water potential significantly, water use efficiency improved significantly during version from high to low, followed by pre-flowering+young period and young period.4. RDI increased SPS, Mg2+-ATPase, Ca2+-ATPase activity of berry and SPS, SS activity of the leaves, improved SS activity of fruit during swollen and pre-flowering+swollen period, the RDI treatment reduced AI, NI, CBAI activity of berry and NI, CBAI activity of the leaves.5. The RDI treatment was benefical to the formation of qulity, mainly increased anthocyanidin, total soluble solid, total soluble sugar and the content of fructose, reduced the titratable acid content. RDI increased reducing sugar and sucrose content of berry during version, total soluble sugar and reducing sugar content of leaves was increased, but had no significant effect of sucrose.6. The RDI treatment was benefical to vegetative growth and drought resistance during young fruit period. The RDI treatment improved fruit quality of grapevine during swollen period, pre-flowering+swollen period and maturation period, but had no significant effect. RDI improved fruit quality and WUE significantly during version, its yield was relatively stable. Moreover, version was the best period of RDI and irrigation system.
