Physical and chemical properties of rice during storage series of changes led to the decline in quality, fatty acid oxidation rice aging an important factor. Fatty acid oxidize (LOX) catalysis of rice grains and lipid per oxidation, baldheads, ketenes and other volatile substances and hydrogen peroxide and its derivatives and free radicals, these substances caused the protein, membrane structures, tissues and DNA damage, shorten the time of safe storage of rice, and accelerate rice aging. Fatty acid oxidation enzymes (LOX-1, LOX-2, LOX-3) three is enzymes the LOX-3abundantly expressed in the mature embryo, accounting for not germination of rice seed LOX activity80%to90%, is a key enzyme of rice aging process.To further clarify the rice aging mechanism, we get the following conclusions:(1) As aging index for phenotypic classification index, we screen12age-related molecular markers from an average of264molecular markers. They were from distributed in12chromosomes in the rice, and use these12markers for genotype analysis in35rice varieties. Cluster analysis based on genotypes of rice varieties, rice varieties were divided into resistant storage group(A) and intolerance storage group (B).Total phenols changes group A was significantly better than group B.(2) Analysis of the differences in LOX-3gene and its regulatory sequences of two sub-group representative varieties A、B. Get the key sequence to affect the expression of LOX-3. Resistance to storage varieties of lox-3genotype specific sequence is TTAAATCAACTTTTCG.(3) W45, Jinyuan E5in the controlled atmosphere storage of grain of intolerance storage group B. Determine and analysis the fatty acids, total acid, Lipoxygenase, LOX-3and other metabolic composition in rice fatty acid oxidation. Results show that low oxygen atmosphere better inhibition of fatty acid oxidation, and the best storage conditions are temperature0℃, O2concentration of1%.(4) W45in the modified atmosphere storage. Determine and analysis the fatty acids, total acid, Lipoxygenase, LOX-3and other metabolic composition in rice fatty acid oxidation. Results show that the best thickness of plastic PE film is0.12mm.
