In this paper,6main kinds of monofloral honey(acacia honey, medlar honey, date honey, milk vetch honey, litchi honey, linden honey, different origin, each of14samples and84totally) in market of Zhejiang Province was researched, through pollen inspection, high performance anion exchange chromatography-pulsed amperometric detection combine retention index, stable carbon isotope ratios and Raman spectroscopy application had made a comprehensive study of honey adulteration. The main results were as follows.1. Pollen inspection operation has advantages of simple, fast and so on, in some extent, which can be used directly to determine whether honey adulterated or not. In this study, which was not suitable for acacia honey to determine the adulteration, while it was effective for other five kinds of honey, average pollen content of bee plants in five species were mainly between30%to60%, not very high. Sometimes it can be also affected by uncertain experimental factors such as subjective.2. Retention index rules were also can be used in ion chromatography, logarithm of capacity factor of maltooligosaccharides with its degree of polymerization exist linear relationship (r≥0.9965). HPAEC-PAD combine retention index can identified adulteration of starch syrup in honey. If mixed with starch syrup, there will appear at least one pair of related peaks between maltopentaose to maltohexaos and maltohexaos to maltoheptaose, specific location with similar functional group retention index, which not exist in real honey. The application of retention index get a better accuracy rate than GB/T21533.3. Stable carbon isotope method could not recognize C-3plant sugars in honey and exist blind zone; Raman spectroscopy is simple and fast, but could not successfully to identify the adulteration of unknown honey directly, and there was a high similarity map of real and adulterated honey. Honey Raman signal was weak and need for surface enhanced, this method through modeling and stoichiometry need a large number of samples that would be difficult.4. In this study, the quality of six kinds of monofloral honey was acceptable,76.19%samples in84with no adulteration, while23.81%exist problem. In summary, the detection of honey adulteration required combination of different methods to get the effective result and can improve the accuracy of discrimination.
