Rabbit meat has the high protein, high amino acids, high digestibility and low-fat, low-energy, low-cholesterol, nutrition and health care function, so it attracted people of all of ages. Nowdays, the fatty acids also become one of the functional assessment of meat quality and nutritional indicators in the rabbit meat. Fatty acid composition in meat not only control cell metabolism and maintain the integrity of the cell membrane, but also affecte the quality of rabbit meat, such as flavor, maturity and so on.Hense, breed and product the best combination of fatty acid composition in rabbit as producers breeding objectives. With the development of molecular biology technology, the genes associated with fatty acid content and components have to be found and studied, especially fat-type fatty acid binding protein (FABP4), stearoyl coenzyme A dehydrogenase (SCD1), leptin (OB), because these genes indirectly or directly associated with fat metabolism and related diseases, but research has focused on these genes only in cattle, goats, pigs and and other large livestock, rarely reported on economic animals such as rabbits. In this experiment,70United States Department of Rex and70Ira meat rabbit as the research object, in other external conditions consistent with the premise, the FABP4, OB, and SCD1gene as research object, from the molecular level to study wheather these genes have releated with rabbit meat fatty acid composition and content. The experimental results showed that:1. Through use gas chromatography to test the fatty acid composition and content of the Iraq meat rabbit and Rex rabbits muscle. The two kinds of rabbits have the same kinds of fatty acids, there were detected eight kinds of fatty acids, which are Rex:C14:0(1.61%),C16:0(24.29%),C16:1(2.74%),C18:0(11.42%), C18:1(18.36%), C18:2(29.22%),C18:3(0.56%), C20:4(11.79%).Meat rabbits:C14:0(0.96%), C16:0(23.63%), C16:1(1.43%),C18:0(14.13%), C18:1(13.03%), C18:2(23.77%),C18:3(0.59%), C20:4(22.56%). 2. United States Department of Rex and Ira meat rabbit FABP4gene only introl and exon2have polymorphism. And in introl two of the rabbits found three genotypes, TT, TC and CC. Two of rabbits with the CC genotype have higher oleic acid, linoleic acid, and U/S (saturated fatty acids and unsaturated fatty acid ratio) content and the value than TT and TC genotype. The two kinds rabbits have two genotypes in exon2, TT and TC.Two of rabbits with the TT genotype have higher oleic acid, linoleic acid, and U/S content and the value than TC genotype.3. In United States Department of Rex and Ira meat rabbit only introl and exon2of OB gene have polymorphism. In introl two of rabbits with the AA genotype have higher oleic acid, linoleic acid, and U/S content and the value than AG genotype. In the exon2sites, two rabbit species with the TC genotype have higher oleic acid, linoleic acid, and U/S content and the value than TT genotype.4. United States Department of the Rex and Ira meat rabbit SCD1gene only exon5have polymorphism, and both of those rabbits have two genotypes AA and AB, Rex and meat rabbit with the AB genotype have higher oleic acid, linoleic acid, and U/S content and the value than AA genotype.
